Unlike large standard chickens which tend to hang around at the bottom of the coop due to their excessive weight, small bantams can easily jump up to the highest perches, giving your chicken coop plenty of space to keep more chickens. Build plenty of perches, nests and feeders so that the bantams can jump around from perch to perch and eat from any part of the coop.

Bantam chickens have tendencies to jump really high and some can almost fly across an entire field. Therefore you want to make sure that if your chicken coop has an attached chicken pen or chicken run, it is covered with a high net or its surroundings have really high fences. The last thing you want is for your bantam chicken to fly over your fence because they are not smart enough to jump back across.

#3:

Bantams can be quite feisty. As cute as they are, bantam roosters can become quite aggressive when their territory is threatened. You may want to separate the chicken coop into smaller compartments with chicken wire. Keep one rooster per every three hens.

Be aware of injured bantams. For some strange reason, I have had many of my bantam chickens get eaten alive by the other bantams. This may sound absurd but it is true. Chickens tend to peck at each other at times and if they draw blood, the other chickens will begin pecking at the blood and eventually killing off the innocent chicken. This is why you should remove any chicken that you notice has been pecked or injured and keep it in its own cage for a week until it heals.

2. Whisk the egg whites, mustard, thyme, garlic powder, and cayenne together in a separate shallow dish.

This makes enough jerk chicken for about 4-6 servings, so double the recipe if needed.

Marinade
1/2 cup fresh orange juice
1/2 cup fresh lime juice
1 bunch of green onions, white and green parts roughly chopped
3 large garlic cloves, roughly chopped
2-3 habanero or Scotch bonnet peppers, stemmed and seeded
1 tablespoon fresh thyme leaves (or 2 tsp. dried)
1 tablespoon ground allspice
1 tablespoon kosher or sea salt
2 teaspoons ground black pepper
1 teaspoon dry mustard
1/4 teaspoon dry or freshly grated nutmeg
3 pounds bone-in chicken drums and thighs
2 large handfuls apple wood chips, soaked in water for about 30 minutes

1) Combine the marinade ingredients and process in a blender or food processor for about one minute until pulverized. Use rubber gloves when handling the peppers.

2) Trim and discard any large pieces of fat on the chicken pieces. Cut a few shallow slits in each piece of chicken. This will let the flavors of the marinade and the smoke seep into the chicken. Place all chicken pieces into a large, sealable plastic bag. Pour the marinade into the bag, seal, and mix it all around the chicken. Place in refrigerator to marinade for 12-16 hours.

3) Prepare a charcoal fire with higher heat on one side, and lower heat on the other (two-tone fire). Push the charcoal all the way to one side so it only covers about 1/3rd of the charcoal grate. If you are using a smoker, set it for a heat range of 225-250 degrees Fahrenheit. Drain the water from the apple chips, and add about half of them to the grill.

4) Remove the chicken from the plastic bag and let sit on a tray for 20-30 minutes before grilling. Pour the marinade into a small saucepan and keep it refrigerated for the first hour of the chicken cooking.

5) Use a wire brush to clean the cooking grate. When the apple wood begins to smoke, start grilling the chicken, skin side down, over the side of the grill without the charcoal (indirect heat). Close the lid and keep closed as much as possible.

6) Bring the marinade to a boil, and let it boil for about 30 seconds or so to kill any bacteria. Brush the marinade all over the chicken, then turn skin side up. Add the remaining wood chips, cover, and continue to grill for another 45 minutes to an hour.

7) At this point, the meat will be very tender, but the skin will be soft and rubbery. Move the chicken to the hot side of the grill, skin side down first, and cook until well-browned on all sides (5-10 minutes), turning once or twice, and moving pieces around for even cooking. Serve chicken warm.

Once again, this is not for weak. But the spices and flavors from this authentic Jamaican jerk chicken recipe will have you saying "no worries" in no time.

This delicious and easy to make pasta dish is a meal on its own! A cream sauce is the signature of this pasta casserole that is believed to be invented in San Francisco, where it was named after the then-famous opera star Luisa Tetrazzini.

Ingredients

2 Chicken Breasts (cut into 1" cubes)

2 tbsp. Olive Oil

1/4 cup Butter

2 Large finely chopped Shallots

2 cups Sliced Mushrooms

1/4 cup All Purpose Flour

4 tsp. Chicken Bouillon

1/2 tsp. Pepper

1/2 tsp. Salt

1/3 cup Sherry

2 cups Water

1/2 cup Heavy Cream

4 cups of cooked Egg Noodles or Seashell Pasta

Salt & Pepper to taste

Preparation

In a large frying pan, cook diced chicken in 2 tablespoons of olive oil. When cooked all the way through, remove chicken with a slotted spoon leaving juices in the frying pan.

Add 1/4 cup of butter to the frying pan and sautee shallots and mushrooms, cooking on medium heat for 5 minutes.

Mix 1/4 cup of flour, chicken bullion, salt and pepper then sprinkle over cooked mushrooms and shallots. Add Sherry and water and boil for 5 minutes.

Stir in Heavy Cream then add salt and pepper to taste. Add cooked chicken and noodles then serve hot.

This dish is also good served as in a casserole dish with melted mozzarella and/or parmesan cheese. Some variations include diced green peppers or broccoli flowerettes.

In small mixing bowl, combine broth, cornstarch and sesame oil, stirring to dissolve cornstarch. Stir into chicken-vegetable mixture

1/2 x Avocado, diced

2 x Tomatoes, diced

1/2 c Green onions chopped

1/4 c Red wine vinegar

3/4 c Olive oil

1 tb Tomato sauce

1 tb Lemon juice Clove garlic, minced

1/2 ts Salt

Sauté chicken in oil with garlic, onion, salt, paprika, pepper and
Worcestershire sauce for about 10 min's. Cool completely. Toss lettuce

In a large bowl combine the onion, chicken mince, paprika, chilli, breadcrumbs, beaten egg, lemon thyme and some salt and freshly ground black pepper. Mix it well using your hands. Divide the mixture into 6 equal portions and shape into round balls. If you want a cheese burger then press a piece of cheese into the centre of each ball and mould the mixture to completely enclose the cheese. Flatten the balls slightly and shape to make chicken burger patties.
  3. Heat the butter and 1 tablespoon of oil in a large frying pan. Add the garlic. When the mixture is foaming, add the patties, pressing with a spatula to flatten slightly. Cook over medium heat for about 3 minutes on each side, or until the patties are nicely browned and the meat cooked through. If you put cheese in the middle then the cheese should be melted.
  4. Cut the bread rolls in half. Toast if you prefer and spread with a little butter. Fill the rolls with lettuce and tomato slices, a chicken patty, sour cream, some pickled cucumbers and sweet chilli sauce.
