Why should anyone bother to make their own Chicken Nuggets, when they can buy them conveniently ready made? Even ready cooked as a fast food take-away. Well, chicken is usually a meat that most kids will eat and for some reason a coating of breadcrumbs makes it even more appealing. If you are concerned with what goes into processed and ready packaged food in the way of preservatives and additives though, you might like to produce your own chicken nuggets for those occasions when your children demand comfort food. These home-made chicken nuggets taste much nicer than bought ones and you know exactly what's in them - that there are no unwanted preservatives, that it really is chicken, if you have a source of affordable organic chicken you can use that and they will also be really fresh.

The preparation time isn't that long, about ten minutes, but the chicken nuggets cook crispier if they have a little drying time in the fridge before frying (yes I did say frying, let's live dangerously on one dietary front!) so the first stage can be done up to two hours before cooking, when you have ten minutes to spare. After that the cooking time is very quick. The quality of the breadcrumbs does make a difference. Fresh, slightly dry, crumbs are definitely better than those powdery packets of 'golden' crumbs that you can buy. On the occasions when I'm being a zealous and organised mother, I whizz up stale (but not mouldy) white bread in the food processor and keep a freezer bag full in the freezer. Hopefully that will last until the next bout of housewifeliness hits me. If you don't have a ready prepared stash of crumbs, whizz up a white roll from the freezer to make crumbs and spread them on a plate to dry slightly.

Chicken Nuggets Recipe

450g/1lb Chicken breast fillets

30g/1oz plain flour

¼ teaspoon Chicken spice mix (optional or substitute your favourite spice)

¼ teaspoon salt

1 egg

3-4 handfuls of breadcrumbs

These quantities are a rough guide, increase or reduce them according to how much chicken you want to cook.

Cut the chicken into bite sized pieces. Get four bowls or plates. The first for the sieved flour with mixed in a pinch of chicken spice, salt and pepper. The second for the egg, beaten with a pinch of salt and half a tablespoon water or vegetable oil. The third for the breadcrumbs. The last is to put the finished nuggets on.

Dip each piece of chicken, first in the flour mix so it is coated, shake off any excess. Next into the egg and lastly roll it in the breadcrumbs before laying it on the plate to dry. As you work through all the pieces your fingers will get a thick coating on too, resembling chicken nuggets themselves. When all the chicken pieces are coated put the plate uncovered in the fridge to dry and crisp up a bit. This can be for as little as ten minutes but an hour or two is better.
To cook, heat up approx 3 tablespoons sunflower / vegetable oil in a wide frying pan. When hot add as many nuggets as will fit without crowding. Turn when golden on one side. When all sides are cooked remove onto kitchen paper to drain off some oil. As soon as they are all cooked serve while hot.

You could do the same thing with strips of fish to make your own fish fingers and gain the supermom of the year award! Having said that you do need to have something ready-made as a standby in the freezer for those days when cooking supper is too much and bought fish fingers have that slot in our house.

For an average sized pair of chicken legs you will expect to roast them for around 45 to 50 minutes in a hot oven around 220 degrees. Below is one of my favourite chicken seasoning recipes which derives from a Creole/Cajun source and is quick, easy and in most cases you will have the ingredients within your spice cabinet. Simply make up a batch and keep it together in an airtight jar for later use.

Creole/Cajun Chicken Seasoning Mix

* Quarter of a cup of salt
* 3 Tablespoons of Garlic granules or powder
* 3 Tablespoons of black pepper - grind it fresh for maximum flavour
* Half a teaspoon of cayenne pepper (give it some more if you like, this is down to your preference)
* 1.5 Tablespoons of paprika

Simply place you chicken legs and a couple of table spoons of the spice in a plastic bag. Blow into the bag softly to inflate whilst closing thereby trapping the air inside like a balloon. Shake gently to fully coat your chicken legs thoroughly. Place on a baking tray and bake the chicken leg quarters as above until cooked through.

If you are planning a birthday party for your child, one of the most important considerations should be the food you plan on serving. After all what kid doesn't love to eat?

Pineapple chunks, apple slices, grapes or raisins, strawberries, banana chunks and peach slices all make great finger foods. Whether you serve them with or without some type of fruit dip, kids will love them.

Buy miniature hot dogs and serve with dips of ketchup, bbq sauce, and a mild honey mustard sauce. French fries are delicious with these sauces as well. Children love chicken wing drummets. Buy them prepared or make them yourself. If you buy them get the plain ones.

Pasta Milano - A Delicious Macaroni Grill Favorite You Can Make at Home

I love to go to Romano's Macaroni Grill. From smell of the open fire grill as I open the front door to the sound of the singing waiters as I set down at my table, I love it all.

Unfortunately for me, on my very first visit I tried the Pasta Milano and fell so deeply in love with it that I have not been able to order anything else. I try. I really do. It all looks so good. From the brick-oven-cooked BBQ Chicken Pizza and the Penne Rustica to the Seafood Linguine, from the Chicken Portobello to the Honey Balsamic Chicken -- I am dying to try it all.

And I have every good intention to do so. I study the menu from top to bottom -- finally picking out Grilled Salmon or Chicken Marsala. I can already taste it.

But as soon as the waiter approaches -- Bam! I point to the Pasta Milano.

Thanks to this copycat restaurant recipe my next trip to Romano's Macaroni Grill ought to follow a different script. I am now free to look over the wonderful menu and order one of the other dishes I have so often craved. I can hardly wait!

Macaroni Grill's Pasta Milano

Ingredients:

  • 6 ounces Butter
  • 18 ounces grilled Chicken, sliced
  • 12 ounces Sun-dried Tomatoes
  • 12 ounces Mushrooms, sliced
  • 6 tablespoons finely grated Parmesan Cheese
  • 36 ounces roasted Garlic Cream Sauce (Recipe Follows)
  • 36 ounces Bow Tie Pasta

Directions:

  1. Cook the pasta as directed on package.
  2. Sauté butter and mushrooms about 30 seconds.
  3. Add the roasted garlic cream sauce and Parmesan; heat thoroughly.
  4. Drain pasta.
  5. Add pasta to the sauté pan and mix well.
  6. Garnish with Parmesan cheese
  7. Serve and Enjoy.

Roasted Garlic Cream Sauce

Ingredients:

  • 1 quart heavy cream
  • 1 head roasted garlic
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons fresh parsley - coarsely chopped
  • 2 teaspoons salt
  • 1 cup Parmesan cheese - grated

Directions:

  1. In a blender process the cream and roasted garlic until smooth.
  2. In a large saucepan, combine garlic cream, pepper, and 2 tablespoons of the parsley.
  3. Bring to a boil, reduce heat and simmer for 15 minutes.
  4. Add salt and Parmesan to mixture, stir until sauce has thickened.

Rice has always been the staple food in Filipino cuisine, but until recently, plain and fried were the only varieties we knew. It was only a few years ago that we started playing around with rice recipes such as java, garlic, chili, and Chinese. But what seems to be a hit among Filipinos is rice toppings, wherein meat and vegetable dishes are served on top of a box of rice. It's the same old Filipino food, but packed in a light, convenient way. You've probably seen them in malls, sidewalks, and school cafeterias.

But although they come in handy on busy days, they're often overpriced, especially considering that you can do them yourself at home. That's right-you don't have to run to the mall whenever you're craving. What's more, there are no long lines and you can mix and match toppings as you please. Here are some Filipino food recipes that make excellent rice toppings.

Chicken Curry

It's more Indian than Filipino, but it fits in perfectly with other Filipino cooking recipes. Curry blends well with rice because of its strong flavors. Use it on plain white rice-flavored varieties will wash out the taste of the curry.

Ingredients:

3 cups chicken meat, diced

1 cup chicken broth

2 tbsp curry powder

1 small onion, chopped

½ tsp powdered ginger

¾ cup flour

¾ cup butter

2 ½ cups milk

garlic to taste

Procedure: In, melt the butter and sauté the ginger, garlic, onion, and curry powder. Set on low heat and let stand for about 1 minute. Add in the broth and milk and stir until the soup is thick. Stir in the chicken and cook until the chicken is done. Serve over white rice.

Stir-fried Beef Teriyaki

Filipinos love teriyaki dishes because of their distinct Asian flavor. They make excellent rice toppings because they're easy to cook and personalize-you can make them all-meat, all-veggie, or a mix of the two like most Filipino recipes. This recipe can be prepared in advance, perfect for those hectic weekdays.

Ingredients:

½ kg beef round, cut into strips

3 tbsps teriyaki sauce

2 tsps cornstarch

2 bell peppers, cut into strips

6 spring onions, thinly sliced

4 tsps vegetable oil

Procedure: In a bowl, mix together the cornstarch, teriyaki sauce, and half of the vegetable oil. Stir in the beef and refrigerate for about 45 minutes. Meanwhile, stir-fry the onions and bell peppers in the remaining oil for about 3 minutes. Remove from the pan, then stir-fry the marinated beef for another 3 minutes. Stir in the vegetables and cook until the beef is done.

Honey Lemon Chicken

This tasty topping provides a good contrast to wild and flavored rice, especially the Chinese and garlic varieties. It also goes well with cold Filipino desserts recipes and salads. The dish is fairly easy to prepare; you can have it ready in less than 30 minutes.

Ingredients:

4 pcs skinless chicken breasts, chopped

1/3 cup honey

¼ cup lemon juice

¼ cup butter, melted

2 tbsp hot water

1 tsp seasoning

Procedure: Preheat oven to 325oF. Place the chicken breasts in a baking dish with the bone side facing down. Sprinkle with seasoning. Set aside. Mix the honey and hot water, then add the butter and lemon juice. Pour over the chicken breasts and cover with foil. Bake until the chicken is just done. Remove the cover and baste with the remaining sauce. Continue cooking until the chicken is browned, basting occasionally to add flavor.

Sweet and Sour Pork

A favorite viand among Filipinos, sweet and sour pork is a perfect complement to almost any rice variety. It's great for kids as it offers a nice blend of flavors and a balance of meat and vegetables.

Ingredients:

¾ kg pork loin, deboned and sliced into bite-size pieces

2 ½ c pineapple chunks (reserve juice)

1 tbsp soy sauce

¼ c vinegar

¼ c packed brown sugar

½ c onion slices

1 pc green onion, thinly sliced

2 tbsp cornstarch

½ tsp salt

¾ c water

Procedure: sauté the pork in vegetable oil until it turns light brown. In a bowl, combine the water, pineapple juice, soy sauce, vinegar, salt and sugar. Mix until well dissolved. Pour over the pork andlet it simmer until the meat is soft. Dissolve the cornstarch in 2 tablespoons of water, then add to the pork. Turn down the heat and continue stirring until the mixture thickens. Stir in the pineapple chunks, pepper and onions. Simmer for another 10 minutes, then serve over rice.

Chicken Stir Fry

Ingredients:

2 Plump Chicken Breasts

A splash of soy sauce

Quarter of a pint of chicken stock

A tablespoon of vegetable, palm or olive oil.

Half an onion.

Half a sweet pepper.

First things first, cut all of the ingredients up- the chicken should be cut into chunks approx 1-2 cm in width, and the onion should be diced up finely. The sweet pepper should have the core removed, and be cut into strips.

Place your wok on a medium heat, and add the oil- when it is nice and hot cook the chicken for 8-10 minutes until it is golden brown, stirring so you do not let it burn. Make sure it is cooked throughout.

Take the chicken out and keep it warm, and add the peppers and onions for a few minutes and then add the stock and enough soy sauce to give it some flavour. Cook for another couple of minutes, until the mixture starts to thicken, add the chicken back in and serve with rice or noodles for a delicious meal.

This recipe should serve 2 and can be prepared and cooked easily in under half an hour- as long as you stick to healthy ingredients it makes a great quick and easy meal, especially after a long day at the office. You can also try different chicken stir fry recipe variations- try adding bean sprouts for some more authentic flavour, or maybe a little bit of cayenne pepper if you prefer you food to have a little bit of spice with it- you could also try a chicken and broccoli stir fry.

1 c apricot nectar

1/2 ts ground allspice

1/3 c apricot preserves

3 tb pecans, toasted

Have the chicken breasts skinned and boned. Place the chicken in an oven proof pan large enough that the chicken will not be overlapping. Combine the next 5 ingredients and pour over the chicken, turning the chicken to get the marinade over all parts. Cover tightly and refrigerate overnight or at least 8 hours.

Remove from refrigerator and let stand for 30 minutes. Cover tightly with foil and bake in preheated 350 degree oven for 30 minutes. Uncover, drain and discard liquid from chicken, and keep warm. Heat apricot preserves and brush over chicken. Bake, uncovered, 20-30 minutes longer, basting with preserves another 2 times.

Remove to serving platter and sprinkle with toasted pecans. Serving ideas : serve over rice.

This dish might not require many ingredients but it is full-flavored and perfectly balanced in terms of taste. You can use mirin if you do not have sake. Mirin is an Asian cooking wine.

What is Shoyu?

This ingredient is a dark brown liquid made from fermented soya beans. The hard-to-digest starches, fats, and soy proteins are converted into simple fatty acids and sugars by means of either an old-fashioned fermentation process or a chemical process. Shoyu is made with wheat and soya beans, unlike tamari, which is made with soya beans only. This ingredient is used in many Japanese recipes and you can get it in the Asian food section of most grocery stores. Keep it for up to a year at room temperature.

Poultry and soy sauce dishes are very popular in various Asian cuisines and most of these cuisines have at least one such dish. Teriyaki marinades often use a lot of shoyu but this recipe uses chicken broth to add another flavor and to dilute it a bit. Boneless chicken is used to make this tasty Japanese recipe and it cooks faster than bone-in chicken.

What you will need:

  • 2 boneless chicken breasts
  • 2 boneless chicken thighs
  • 1/2 cup brown sugar or honey

How to make it:

Wash the poultry and pat it try. Cut the breasts in half. Add the sake, ginger, honey, shoyu, and broth to a deep skillet and bring the mixture to a simmer. Add the meat and cover the pan. Let it poach for ten minutes, then turn over the pieces and poach the mixture for five more minutes or until the meat is done.

Arrange the chicken on a serving platter and poach the liquid for a few more minutes until it reduces a bit. Take the skin off the bird and pour the liquid over the finished dish. Serve the it garnished with green onions and with some steamed white rice.

What to Do with the Leftover Skin

You can discard the skin if you want to, else you can make a really delicious snack by cutting it into little pieces and frying it in a hot skillet until golden brown. Drain the fried skin on a paper towel and serve it as a garnish or snack. This is a bit like pork rinds but less fatty. It will keep in an airtight container for a day but then it will start to go soggy.

2. Heat wok until smoking hot, add oil and swirl around the wok till the oil is hot.

3. Add snow peas (mangetout) sticks, carrot sticks into the wok. Mix and cook for about 2 minutes.

4. Then add the cooked chicken and mix into the vegetables. Pour 2 tablespoons dark soy sauce over the mixture, stirring frequently.

5. Mix 1 teaspoon corn flour with some water and pour into the wok, stir and turn mix over.

6. Add 1/2 teaspoon chicken powder to taste. Divide the rice and chicken into four, put fried chicken over the rice and serve. If the rice is cold, add back to the wok and stir fry with chicken until is hot.

ROASTED CHERRY TOMATO & PASTA SALAD

This pasta salad is a great accompaniment to barbecued chicken, steaks or chops. Roasted cherry tomatoes are very juicy and have an intense, smoky-sweet flavor, that is set off perfectly by the peppery taste of fresh rocket.

Serves 4

Ingredients
225 g / 8 oz / 2 cups dried chifferini or pipe
450 g / 1lb ripe baby Italian plum tomatoes, halved lengthways
75 ml / 5 tbsp extra virgin olive oil
2 garlic cloves, cut into thin slivers
30 ml / 2 tbsp balsamic vinegar
2 pieces sun-dried tomato in olive oil, drained and chopped
A large pinch of sugar, to taste
1 handful rocket, about 65 g / 2½ oz
Salt and ground black pepper

Preheat the oven to 190°C / 375°F / Gas 5. Meanwhile, cook the pasta in a large pan of salted boiling water according to the instructions on the packet.

Arrange the halved tomatoes cut side up in a roasting tin, drizzle 30 ml / 2 tbsp of the oil over them and sprinkle with the slivers of garlic and salt and pepper. Roast in the oven for 20 minutes, turning once.

Put the remaining oil in a large bowl with the vinegar, sun-dried tomatoes, sugar and a little salt and pepper to taste. Stir well to mix. Drain the pasta, add it to the bowl of dressing and toss to combine.

Add the roasted tomatoes to the pasta and mix gently. Before serving, add the rocket, toss lightly and taste for seasoning, adding more if necessary. Serve either at room temperature or chilled.

COUNTRY PASTA SALAD

This salad is packed with vegetables and is ideal for a summer picnic. Use fresh Parmesan from the delicatessen, which is less mature and sold as a table cheese, rather than the hard, mature Parmesan used for grating.

Serves 6

ingredients
300 g / 11 oz / 2¾ cups dried fusilli
150 g / 5 oz green beans, topped and tailed and cut into 5 cm / 2 in lengths
1 potato, about 150 g / 5 oz, diced
200 g / 7 oz baby tomatoes, hulled and halved
2 spring onions (scallions), finely chopped
90 g / 3½ oz Parmesan cheese, diced or coarsely shaved
6-8 stoned (pitted) black olives, cut into rings
15-30 ml / 1-2 tbsp capers, to taste

For The Dressing
90 ml / 6 tbsp extra virgin olive oil
15 ml / 1 tbsp balsamic vinegar
15 ml / 1 tbsp chopped fresh flat leaf parsley
Salt and ground black pepper

Cook the pasta according to the instructions on the packet. Drain and rinse under cold running water, then shake to remove as much water as possible. Leave to drain, shaking occasionally.

Cook the beans and diced potato in a pan of salted boiling water for about 5 minutes, or until tender. Drain and leave to cool. To make the dressing, put all the ingredients in a large bowl, season and whisk well to mix.

Add the tomatoes, spring onions, Parmesan, olives and capers to the dressing. Place the pasta, beans and potato in a large bowl and pour over the dressing. Toss well, cover and leave to stand for 30 minutes. Taste for seasoning and serve.
