What you will need:
- 1/2 lb boneless turkey breast, in 1/2 inch cubes
- 2 minced cloves garlic
- 1 tablespoon vegetable oil
- 1 1/2 cups water
- 2 cups chicken broth
- 6 oz Velveeta
- 1 can black beans, drained and rinsed
- 1 teaspoon salt
- 1/2 teaspoon cumin
- 1/2 cup instant masa mix or masa harina
- 1 chopped onion
- 1 can corn, drained
- 2/3 cup enchilada sauce
- 1 1/2 teaspoons chili powder
- Juice from 1 lime
Add the oil to a pot over a moderate heat, then saute the turkey, garlic and onions for five minutes or until the turkey is browned. Add the broth. Mix a cup of water with the masa harina and whisk it well to get a thick liquid. Add this to the pot and stir well. Add the rest of the water, the cheese, spices, and enchilada sauce and bring the soup to a boil.
Turn the heat down, then add the corn and beans, and simmer it until it is thick. Add the lime juice and stir it in. Serve the soup immediately in mugs or bowls, garnished with cheese, tomatoes, green onions, and avocado and corn tortilla chips.
