How to Make an Enchilada Soup Recipe With Turkey

There are lots of recipes in which turkey is used instead of chicken. These two meats have a similar flavor, although turkey tends to be richer. If you have some turkey to use up, enchilada soup is a delicious dish, which will appeal to the whole family. Using turkey to make it instead of chicken adds an unusual spin to this classic recipe.

An enchilada is a corn tortilla, which is wrapped around some kind of filling and then smothered with chili sauce. An enchilada soup contains chili powder or chilies, as well as corn tortillas, although the tortillas are usually served as a garnish.

Caribbean Recipes - Spicy Trinidad Curry Chicken Recipe

Our Caribbean Recipe is one of several. Every Island has their version of curry. This curry chicken recipe comes from Trinidad and is truly Caribbean. The East Indians came to this part of the world after slavery was abolished. Their cuisine went through a metamorphosis and the curry that we cook today bears no resemblance to the ones from India and Pakistan.

Caribbean Recipes - CURRY CHICKEN

\"chicken Recipe\"

2 lb. Chicken breast cut into bite sized pieces 4 potatoes peeled and diced 1 large onion chopped 1 1/2 ozs. Curry powder 6 cloves garlic minced 1/2 tsp. Hot pepper sauce 1 1/2 tsp. Salt or to taste 2 cups water 1/4 cup vegetable oil.

Caribbean Recipes - Spicy Trinidad Curry Chicken Recipe

Secret Ingredient... 3 tbsp. Tamarind paste, 1 large green mango diced or 3 tbsp. lemon juice

The secret to making a really special curry is to stir-fry the dry powder for a few seconds before adding the meat. This process releases the curry flavour which is then absorbed in full by the meat.

* Heat the oil in a saucepan and then add the onion and garlic.

* Stir-fry for two minutes or until the onions go limp.

* Add the salt and curry powder and continue stir frying for about ten seconds more.

* Add the meat and stir to coat with the curry mixture.

* Cover the saucepan and let it cook for about five minutes, stirring at least twice during this time.

* Add the water, pepper sauce, tamarind paste and potatoes and continue to cook on medium heat until the potatoes are soft and the meat is fully cooked. This should take approximately 25 minutes.

Cooking tip: When using lemon juice, do not add until the final ten minutes of cooking. The reason of this, is because the lemon juice prevents the potatoes from becoming soft.

Serve with roti or over hot boiled rice.

This Caribbean Recipe is one of my favourites and I am sure that you will enjoy it as well.

How to Make Smoked Chicken

Smoked chicken recipes are all about flavor and how moist the chicken is. Whether you're cooking thighs or a whole bird, certain steps should be taken to guarantee that with every bite, you're sinking your teeth into tender, juicy, and flavorful chicken.

Adding flavor: brine and seasonings

\"chicken Recipes\"

First, soak the bird in brine. This step is essential because brine not only provides the meat with moisture, texture, and flavor, it also helps conduct heat so that the chicken will cook faster without drying out the bird. Heat up these ingredients on a stove:

How to Make Smoked Chicken

- 1 gallon of water
- 1 cup kosher salt
- 1 cup sugar/honey
- Herbs (optional but recommended)

Once the sugar/honey is dissolved, let the brine cool by adding ice. Then place the mixture as well as the chicken into a sealable bag or cooler, where it can marinate. After four hours, take out the chicken and pat it dry before continuing on with your smoked chicken recipes, namely adding seasoning.

After coating the bird with vegetable oil, place herbs or seasoning under the bird's skin. Many recipes also suggest using spices such as lemon pepper but be wary; strong spices often take away from the smoky flavor instead of enhancing it.

Smoking: Different than grilling

No matter what kind of smoker you use-electric, propane, or charcoal-to cook your chicken, the smoker's temperature should reach 225 degrees Fahrenheit before you start cooking.

Place the chicken's back side down, preferably over indirect heat; after an hour and a half, turn the bird over to ensure that the inside meat stays moist.

Before using pecan or other wood chips in your smoked chicken recipe to add even more flavor, be sure to soak the wood chips in water for an hour or more. After the chicken is inside the smoker, place the wood in a container beside the bird. When the smoker stops smoking, this is your cue to add more wood chips.

The heat source warms the wood chips, which, in turn, heats the water in the water tray. The water and smoke will then slowly cook the bird. This way of cooking will create a "smoke ring," which is akin to a "tree ring," within the bird; once the chicken is done, you can see how far the smoke gets into the actual meat based on what parts of the meat are dark.

After about 4 hours, use a thermometer in the thickest part of the chicken to determine if the meat's temperature is at least 160 degrees Fahrenheit. Keep in mind that the bird should eventually get up to 165 degrees, which it will naturally do due to carryover heat since the bird continues to cook and its temperature continues to rise even after you take it out of the smoker. Then, wrap the smoked chicken in foil to ensure that the moisture does not drip out.

Once the chicken has been out of the smoker for about 20 minutes, you've waited and been cooking long enough. Now, it's time to enjoy your smoked chicken recipe.

Tip: Even though you have a golden brown crust on the outside, the inside may not be fully cooked,
especially if you are using frozen chicken which you defrosted. When you have a golden crust, cut
deep into one of the thickest pieces with a sharp knife and observe for any pink coloring.
If pink (or red) continue cooking (reduce heat slightly). There should be no pink!

Refrigerate left overs for up to 2 days. Although it will lose it's crunchiness, cold fried
chicken is very tasty the next day. I would not re-heat it. I like it served cold the next day.

Fried chicken goes with nearly any vegetable but I like to serve with turnip greens, black eyed peas and cornbread. You can find authentic Southern recipes for all these dishes at (see below). How Long to Bake Chicken Breast - Three Different Baking Methods

The question of how long to bake chicken breast will be answered below. What you want to know is that chicken breasts are easy to cook, low in fat, and packed with essential amino acids. For these reasons, chicken breasts have become one of the top choices for meat cut in the US.

One of the challenges of baking it is achieving a perfectly moist, juicy and flavorful meat. At the same time, it should be cooked evenly, all the way through. If the chicken is raw, you might put your diners at risk for food poisoning.

\"recipe Chicken\"

Some people believe that they can eyeball if chicken breasts are already cooked. Unfortunately, this is not the case. Even the most seasoned chefs use some measures to determine if the meat is already done.

How Long to Bake Chicken Breast - Three Different Baking Methods

3 Baking Methods

Dry Heat Method. Dry heat cooking is a technique of cooking the meat without using any moisture. As this involves use of high heat - 300 degrees F or higher, the meat can be cooked in a relatively short period of time. One danger of using this method is that the chicken will not be cooked evenly. A way to get around this is to pound the chicken until you have achieved an even thickness. This way, all parts will cook evenly.

Moist Heat Method. This method uses moisture to help with the cooking. Moisture can in the form of water, wine, stock, or other liquid. Oven temperature is lower - 140 degrees F to 212 degrees F - and so cooking time is longer.

Dry Oven Poaching. This involves use of buttered parchment. The breasts are wrapped with the parchment, then baked at 425 degrees Fahrenheit for 15 to 25 minutes. The parchment seals moisture in, and is thus regarded by many as the best way to bake this part, particularly if you are baking multiple breasts at once. There's little margin for error, and the meat cooks evenly without re-arranging them.

How Long to Bake chicken breast

There's no one answer to this question. Generally, baking time may range from 20 to 45 minutes, Cooking depends on a number of factors including:

Oven temperature

Size and weight of the piece

Whether breast has bone and skin or without

Other ingredients included in the recipe

How to Determine if the meat is Already Cooked

The best way to determine if the meat is cooked thoroughly is to use a food thermometer. Put the thermometer into the fattest part of the meat, and wait for 2 to 5 seconds. The internal temperature should read 165 degrees Fahrenheit, although some experts say that 170 degrees F is also fine.

Food thermometers are available in the kitchenware section of most retail store. An analogue thermometer is generally cheaper, but digital thermometers allow for more accurate and easier reading of temperatures.

No matter what method you use, following suggested cooking time and cooking temperature in the recipe carefully is important. Always have a meat thermometer ready, and you'll have a perfectly cooked, juicy baked chicken breasts.

Now you know not only how long to bake chicken breasts, but you also have 3 different methods of doing so. Happy baking!

Real Jamaican Jerk Chicken Recipe

Jerk is one of the most popular styles of Jamaican cooking. It is used for cooking meat, traditionally pork or goat, but nowadays chicken and fish as well. All jerk dishes are spicy, even fiery, but they can be very tasty and are appreciated by many spice lovers.

The main secret behind the flavor of jerk is in the preparation of the meat. This is done by marinading the meat in a mixture of spices known as "Jamaican jerk spice". Ideally, you should marinade the meat over night in the 'fridge and then cook the following day. Rather than just letting the marinade soak into the meat, I would suggest making some light cuts in the surface of the meat, and rubbing the marinade into these as well as the meat generally.

\"chicken Recipe\"

As already mentioned, Jamaican jerk spice is a actually a mixture of several spices. It gets most of its flavor from two particular ingredients, namely Jamaican allspice (also known as "pimento" or "pimenta") and Scotch bell peppers. Jerk spice also usually contains several other spices such as garlic, cloves, cinnamon and thyme, and is usually mixed with chopped onions and/or scallions before being applied to the meat.

Real Jamaican Jerk Chicken Recipe

The best way to cook jerk chicken is over a charcoal barbecue grill. Ideally, you should place some pimento wood or berries on the grill - but if this is not possible you can put some hickory or apple on the coals instead. Of course, barbecuing meat is not always possible, for example during the Winter or if you live in a city - in that case, you can instead roast the meat in a normal kitchen oven, and still get good results.
