What to Serve With Chicken Tortilla Soup

Chicken tortilla soup is a Mexican dish made with rotisserie chicken, tomato paste and Mexican spices. It is a recipe that you can easily prepare to serve during dinner parties, potlucks or just a simple meal that you are having at home. This can be prepared in many ways, and to avoid all the calories and fats, you can even have your own variety to make at home.

While chicken tortilla soup tastes as delicious as it looks, wouldn't you prefer it if there are other foods or drinks to go with it instead of eating it plain? Now, you might be asking about what to serve with this delicious soup. Here are some suggestions so that your meal will be more delectable.

\"recipe Chicken\"

Beans and Salads
Beans and salads make perfect companions for chicken tortilla soup. For the beans, you can have a bowl of black or pinto beans or refried beans that are non-fat. You will definitely love both dishes, even if the beans do not have that much ingredients mixed with them. On the other hand, you can choose to have a green salad if you can whip it up. What you make will depend on your choice of vegetables and dressings. You can have a salad made vinaigrette which is made of olive oil, minced garlic, lime juice and cilantro. Should you choose to have garnishes, avocado slices, tomatoes or red onions will be perfect.

What to Serve With Chicken Tortilla Soup

Entrees of your Choice
Chicken tortilla soup can make a perfect meal even if it is just the dish that you are going to have. However, it can also be perfect for meals that are Mexican-themed. What you have to keep in mind when choosing the dishes for the main course of the meal will be the richness of the tortilla soup. There are those who make the soup rich, usually made with cheese and sour cream. For this, a lighter entrée is well-suited for the meal such as taco salads and other similar recipes. For light soups which are made with broth, chicken enchiladas and quesadillas will be perfect for the meal.

Drinks and Desserts
There are drinks and desserts that go well with chicken tortilla soup. Beer is one that you might want to consider such as Mexican beers. If you prefer wine, you can also have it such as Sauvignon Blanc or any wine of your choice. You have to choose those that will not compete with the flavor of the soup that you are having. Should a non-alcoholic beverage be your choice, flavored water is suggested as well as pineapple ginger drink. Moreover, desserts that are suited for this dish include pineapple or lime ice or a bowl of fresh fruit.

There is indeed a variety of what you can serve with chicken tortilla soup, from drinks, entrees to desserts. Aside from these suggestions, you can also think about other food to serve with this tasty soup, depending on your preferences. But if you choose to just have the soup, you can always do so.

Mediterranean Chicken Recipe

I made this Mediterranean Chicken for dinner Saturday night and think it's a real keeper. It was quick, easy and delicious and was perfect served with a simple green salad.

I found it as I was flipping throughSouthern Living: Our Readers Top-Rated Recipes;(a cookbook I hadn't opened in a couple of years, which is a shame since everything I've tried from it has been good) looking for ideas for something that would be quick, easy and tasty and feel like I hit the jackpot!

\"chicken Recipe\"

It called for ingredients that I tend to have on hand - boneless skinless chicken breasts, olive oil, canned diced tomatoes, kalamata olives, dried spices, feta cheese and pasta - nothing too unusual.

Mediterranean Chicken Recipe

I made a few modifications to the recipe to accommodate our tastes. The recipe suggests that you add the feta at the end, cover and let it stand for a few minutes, which would be delicious if you like feta cheese. But since my husband isn't a fan, I left it out and put it on the table as an optional topping. I also used an extra can of diced tomatoes since I like my pasta dishes on the saucy side, especially when I know there will be leftovers requiring reheating. (It keeps them from drying out.) I replaced the dried parsley with 1 tablespoon of fresh and used 2 teaspoons of dried Italian herb mix instead of the dried basil and oregano. I also used Ronzoni Healthy Harvest penne, since it was what was what was in the pantry.

If you are like me, always on the lookout for quick easy chicken recipes, this one ranked two thumbs up at our house.

Mediterranean Chicken Recipe

Serves 4

1 pound boneless, skinless chicken breast, cut into 1 inch cubes

4 garlic cloves, minced

2 tablespoons olive oil

2 (14.5 ounce) cans diced tomatoes, undrained

1/2 cup kalamata olives, pitted and chopped

1 teaspoon dried parsley flakes (or 1 tablespoon fresh)

1 teaspoon dried basil

1 teaspoon dried oregano

salt and pepper to taste

2/3 cup feta cheese

8 ounces penne pasta (white or whole wheat)

Bring a large pot of water to boil for cooking the pasta.

Meanwhile heat the oil in a large skillet over medium-high heat. Add the chicken and garlic and cook, stirring occasionally until chicken is done, about 8 minutes. Remove the chicken from the skillet. Add the tomatoes, olives and herbs to the skillet. Reduce heat and simmer, stirring often, for about 8 to 10 minutes.

While the sauce simmers and once the pasta water comes to a boil, slowly add a big handful of salt to the boiling water and then cook the pasta according to the package instructions. When it is done, drain.

Once the sauce has simmered for about 8 to 10 minutes and thickened up, return the chicken to the skillet, stirring to combine. Sprinkle with the feta cheese and remove from the heat. Cover and let stand 5 minutes. Serve immediately over the pasta (or stir the pasta into the chicken mixture and then serve).

"Chicken Slick" - My Chicken and Pastry Recipe

When I make this recipe I may get the chicken cooked and cooled and the fat raised to the top of broth one day and finish the recipe the next day. Just depending on when I start the recipe and the time I have. Read the whole recipe first. Now make your own plan.

Cooking the Chicken First stage

\"recipe Chicken\"

  1. My free range chicken that has been cooling in frig for 24 hours. Oh so good!!!!
  2. Get out the crock pot.
  3. You may use a regular pot on stove and this is quicker so you will have to monitor the chicken more closely but do the same recipe as a crock pot.
  4. Put chicken in crock pot. Cover the chicken completely with water and cover with a lid.
  5. Cook until it starts falling off the bone.
  6. It may take 4-6 hours to cook depending on the crock pot and size and quality of chicken.
  7. Once meat is falling off the bone, I remove the chicken and place in colander with bowl underneath to catch the extra broth.
  8. Now I let the chicken and broth cool.
  9. Once the broth has cooled enough, I put the broth in pitchers, cover and the place in the frig. What I will be waiting for is the fat to rise to the top of the pitchers and the use the fat in the pastry.
  10. Next debone the chicken.
  11. If the skin is good I may put the skin aside to put in the recipe. Just depending on my mood.

"Chicken Slick" - My Chicken and Pastry Recipe

Seasoning the Broth Second Stage

  1. OK every thing is ready now. The chicken is ready and the fat has raised to the top of the pitchers.
  2. Skim the fat off and place in small container and put to the side.
  3. Put the chicken broth on the stove and turn on medium heat. Bring to a gentle boil. Hold out one quart of broth and set aside.
  4. Add 1-2 stalk of celery cut up to the broth.
  5. Add 1/2 to 1 onion cut up to the broth.
  6. Add one teaspoon of salt. This can be your own preference.
  7. Add 1-2 teaspoon of paste chicken bouillon or 1-2 chicken bouillon cubes
  8. Let this cook approx 30 minutes while you are making the pastry

Pastry dough Third Stage

  1. The pastry is now ready to be made.
  2. Measure out 2 cups of all purpose flour into large bowl.
  3. Blend into the flour with a fork approximately 2 tablespoons of the congealed chicken fat that was put to the side. This should only take about 2-3 minutes.
  4. Add approximately 3/4 to one cup of set aside broth to the flour mixture.
  5. Blend and make a ball. Sometimes you may need to add a little flour or add a little more broth. Now you have pastry.
  6. Place sprinkles of flour on the counter and take a section of the ball and put in the center of the sprinkled flour.
  7. Press the balled flour down with your hands. Turn over and press again. Do this a couple of times.
  8. Then use your roller to roll out the flour to be very thin.
  9. Use the back side of a dinner knife and cut thinned pastry strips give or take about one inch wide.
  10. Pick up pasty and place on a lightly sprinkle floured plater.
  11. Take another section of pastry ball, sprinkle a little flour on the counter. Press out the pastry, roll the pastry, cut the pastry, place on plater until you finish with all the pastry.

Making pastry strips Fourth Stage

  1. Now lets get cooking again.
  2. The broth now has been cooking about 30 minutes now and bring to a medium slow boil.
  3. Gradually start putting your strips of pastry into the chicken broth one at the time. Go slowly so you do not lose your boil.
  4. After you finish adding the strips of pastry to the broth have a slow boil going and cook approx 20.
  5. At this stage I sometime may add a cup or two of frozen peas or any vegetable you wish. It is up to you.
  6. Stir the broth and pastry from time to time to prevent sticking.
  7. After the 20 minutes is up add your deboned chicken and chicken skin if you wish and cook another 10 minutes.
  8. Now you are done. Are you hungry yet?

Notes

Now you may think this recipe is too hard to make. Just don't make it hard. Do a little planning. If you are like me you don't have all day to prepare. So plan your stages. I have been making this recipe for years and is always good. After eating and you have left overs then freeze the rest. Also freeze or can any left over broth. I save the broth so I can add to the pasty after freezing cause the pastry soaks up the moisture or the slick and I like lots of chicken slick. Make the recipe to fit your taste. Also if you do not have your own chicken to use you can use a store bought chicken. It just will not be as good.

Butter Chicken Recipe - India's Most Popular Chicken Recipe, With Two Different Variations

The famous butter chicken recipe originated in northern India in the state of Punjab. There is something so special about this recipe, that once you have eaten it you become a fan. The flavors, the color and aroma is absolutely fantastic. If you too want to make this recipe at home then please read on.

Butter chicken, as the name suggests is chicken cooked in butter and served with butter on top. So yes, a lot of butter is used in the making. Traditionally it is made from a tandoori chicken. Boneless pieces are torn from a tandoori chicken and then cooked in a tomato gravy.

\"chicken Recipe\"

The following recipe is made from boneless chicken which is baked in a oven (won't take long), to give a similar taste. If you follow the link at the bottom of this page, it will lead you to another butter chicken, which is made by chicken pieces on the bone. I use onion in that to make more gravy. You can try even that recipe for a change. You will also find how to give a smoky aroma to your gravy, without actually baking the chicken. So first this recipe, with boneless chicken.

Butter Chicken Recipe - India's Most Popular Chicken Recipe, With Two Different Variations

Ingredients

* 300 g boneless chicken (cut into slivers)
* 500 g tomatoes (pureed, if they are too tangy, then take less)
* 100 g thick yogurt
* 1 Tbsp lime juice
* 1 Tbsp of Ginger paste
* 1 Tbsp Garlic paste
* 1 Tsp Turmeric powder
* 1 Tsp Garam masala
* 2 Tsp Tandoori Masala Powder (easily available at any Indian grocery store)
* 1 Tsp red chili powder
* 2 cloves
* 1 green cardamom
* 1 inch stick of cinnamon
* 1 Tsp coriander powder
* 3 Tbsp butter
* 2 Tbsp oil
* 1/2 Tsp Kasoori methi (dried fenugreek leaves)
* a few Cashew nuts
* salt to taste
* A Pinch/drop of red color or kashmiri chili for color.
* 5 Tbsp fresh cream
* Fresh coriander leaves to garnish

Method

Marinate the chicken pieces in yogurt, 1/2 Tbsp each of ginger and garlic paste. Add a teaspoon of tandoori masala, half a teaspoon of turmeric powder, a tablespoon of oil, red color and a tablespoon of lime juice. Keep aside for at least 2 hours.

Then roast it in the oven till chicken pieces are nearly done. Brush with oil and place under the grill for 3-4 minutes, so that the pieces get charred.

In case you don't want oven roast the chicken, you can also place the pieces on a tawa or a cast iron griddle and cook on a high flame, till done.

For the gravy, melt the butter and leftover oil in a pan. Add the cloves, cardamom and cinnamon in that and let them crackle. Then pour the tomato gravy, coriander powder, chili powder and cook on a high flame till it reduces to almost dry.

At this stage you will be able to see little fat globules oozing from the side of the gravy.

Add the cooked chicken and mix. Now add a little hot water, just enough to make a thick gravy. Add the salt, 1 tsp of tandoori masala and garam masala. Also crush the kasoori methi leaves and sprinkle. Mix and cook for a minute or two more, so that the flavors get mixed nicely. Garnish with cream, cashew nuts and coriander leaves. Serve hot with naan or tandoori roti.

So here we go for some fried chicken recipes:

\"chicken Recipes\"

>>Fried Chicken (Version 1)

Fried Chicken Recipes - Amazingly Delicious!

~2 1/2 pounds fryer (up to 3 lbs) cut in servings

~1 cu flour

~1 teaspoon salt

~1/8 teaspoon pepper

~1/4 teaspoon garlic powder

~1 teaspoon paprika

~1 teaspoon leaf sage or oregano butter or vegetable oil

Rinse chicken pieces and pat dry. Combine flour with remaining ingredients except butter. Toss chicken pieces with flour mixture to coat.

In skillet, heat butter to 1/4-inch depth and cook chicken over medium-high heat until golden brown. Place browned chicken in Crock-Pot, adding wings first; Add no liquid. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours.

>>Fried Chicken (Version 2)

~2 -3 1/2 pound Frying chicken cut into 8 pieces Salt Freshly Ground Black Pepper

~2 cups all-purpose flour

~2 tablespoons paprika plus more for the finished chicken vegetable oil

1) Trim the excess fat and skin from each piece of chicken. Sprinkle the pieces with salt and pepper. Stir the flour and paprika together in a shallow bowl. Dredge the chicken pieces in the seasoned flour to coat on all sides. Shake off the excess flour.

2) Pour enough vegetable oil into a heavy deep skillet (cast-iron is perfect) to fill it to 2 inches. Heat over medium heat to 375oF (A all cube of bread dropped in the dropped in the oil will brown in about 20 seconds).

3) Add only as many of the chicken pieces as will fit without touching. Overcrowding will lower the temperature of the oil and make your fried chicken greasy. With a long-handled fork or tongs to prevent getting splattered, turn the chicken pieces until they are golden brown on all sides and cooked through, about 6 minutes. The easiest way to tell if the chicken is cooked is to poke a fork down to the bone near the thickest part if the chicken is cooked the juices will run clear, not pink.

4) Remove the chicken pieces from the skillet to drain. If you have to fry the chicken in batches, keep the fried chicken warm on a baking sheet in a 250 of oven. When all the chicken is fried, sprinkle the pieces with paprika and serve hot.

Fast Crock Pot Recipes! Easy to Make and Never Boring Crock Pot Chicken Recipes!

Tired of the same old crockpot recipes? I'm going to give you 2 that are different, so easy and delicious! What's worse than the same old chicken, carrots and potatoes? That's a good meal, but you get tired of it quickly. So here are a couple that are a little bit different. There are 2 things you need to remember when it comes to crock pot cooking.

1. Don't put frozen meat in the crock pot. Slow cookers bring up the temperature of meat slowly. That's the point isn't it? But if meat doesn't reach 140 degrees within 4 hours, you run the risk of developing bacteria in your food. We don't want this, so no frozen meat. No matter what other recipes say.

\"chicken Recipes\"

2. All crock pots cook differently. Timing will vary for each one. However, you must be absolutely sure that your crock pot brings food up to 140 degrees when on LOW. If it doesn't, you need a new one. So, get a meat thermometer and test it.

Moveable Chicken Coops - A Chicken House on Wheels

So... you've decided to take on the fun filled hobby of backyard chicken raising?

Excellent!

Chicken

I'm sure by now you've bought a batch of baby chickens from your local pet store or expo center and brought them into your home with joy and excitement. Everyday you've fed them and played with them and enjoyed just watching them chirp and make a mess of themselves. For weeks you've sat there and watched them grow, but now you've realized that they are just too big to have inside your house in those empty milk cartons or fish aquariums that you were using to keep them in. You've figured it is time to build a chicken coop and I couldn't agree more.

Moveable Chicken Coops - A Chicken House on Wheels

The problem is...

You have a mesmerizingly, fully landscaped backyard in which you've poured in every last drop of sweat to grow and maintain and the last thing you want to do now is destroy your lawn by permanently building a chicken coop that will tarnish the aesthetics of your home and garden. At the same time, your small flock of chickens are growing and becoming way too large to keep indoors and since you've become quite attached to the little chicks by now, it would be much too painful to give them away. Well, the answer to your problems is quite simple...what you need is a Moveable Chicken Coop.

The Moveable Chicken Coop

Moveable chicken coops are like chicken coops on wheels. Literally. Though not so popular amongst the hardcore chicken breeders of the world which tend to build chicken coops of a large scale for hundreds of poultry and heavy egg layers, the moveable chicken coop was an invention my father created after a major storm, with hurricane like winds, hit our small town. After the storm knocked down some of our coconut trees and demolished most of our plants and livestock, my father needed to move the chicken coop to other parts of the yard in order to clean up the mess. Since it was an almost impossible task to actually lift up the coop with all its weight and relocate it elsewhere, my father came up with the genius idea of installing wheels to the bottom of the chicken coop so that it would be easily rolled to any destination in our yard. This idea was such a success in our everyday chicken raising lifestyle that from that moment on, every chicken coop we ever built was a moveable chicken coop.

Moveable Chicken Coop Perks

With moveable chicken coops, you will never have to worry about having a permanent structure in your backyard ever again. If you wish to keep your moveable chicken coop closer to your porch during the winter for easy access for feeding and cleaning, you can do so. If during the spring you would rather show off your beautiful sprouting garden to your friends and family without having your chicken coop in the way, tarnishing the beauty of your garden...no problem. Just simply roll your moveable chicken coop to another location in the yard where it's most fitting. Even if a major hurricane threatens your area, with a moveable chicken coop, you will easily be able to roll it to a safer position such as your garage if you have the space, or even inside your barn if you live in a farm house.

Wait!

Don't go slapping a pair of wheels on your chicken coop and assume to crown champion at the next chicken coop drag race. An efficient moveable chicken coop is designed with utmost care and planning. Learn how you can construct a well crafted moveable chicken coop here:
