Simple Chicken Recipe - Chicken Breast Stir Fry With Peppers and Onions - An Easy Food Recipe

Want to make an easy chicken recipe. Stir fry dishes are ideal when you are looking for a simple chicken recipe. Most of your time will be spent in the preparation step. Chopping the ingredients takes time, but if you know how to use kitchen tools, such as the chef's knife, it is not that difficult/ If you do your cooking at a higher temperature, and the ingredients are cut into very small pieces, the actual cooking time becomes very short. I sometimes use a WOK, but the vessel I use most is a black iron chicken fryer. Most of the stir fry dishes I make are served over rice. I use a microwave oven for the rice and I always start the rice first so that it is cooking all the time I am preparing the ingredients and cooking them. Stir fries are not only quicker, but are also easy to make. About the only way you can mess them up is to over cook to the point where the ingredients burn. To prevent burning you must keep stirring and when it's done, remove the WOK or skillet from the heat source.

This simple chicken recipe can be made with either raw chicken or you could use leftover cooked chicken. If you use leftover chicken it should be added last, as it will not require as much cooking time as the vegetables. Either way thisw dish is easy to make. If you have a Chinese WOK, this could be used here but I still prefer to use a cast iron chicken fryer. The best way to serve this chicken recipe is over cooked long grain brown rice.

At the store you will need to get three boneless and skinless chicken breasts. A jar of Alfredo sauce which is with the spaghetti sauces, you can just choose any of them. A box of penne pasta, I like to use this pasta because it holds the sauce very nicely. I use Dream Fields pasta personally because it is low glycemic but you can use which you want.

Quickest, Most Delicious Chicken Alfredo Recipe in Less Than 30 Minutes!

You will also need a jar of Parmesan, a loaf of French bread from your bakery, garlic powder, butter, and a bag of shredded cheese, I use the Italian mix but you can just use cheddar if you want.

Approximately 30 minutes before dinner time you will cut up the chicken breasts into bit size pieces and cook them in a hot skillet with 1 tablespoon of butter and 1 tablespoon of olive oil and cook until cooked through. Sprinkle with salt, pepper and garlic powder.

Meanwhile put a large pan of water on to boil and then cut the French bread down the middle to make 2 large pieces, you will want to butter both pieces on the cut side and then sprinkle with garlic powder and generously cover with the shredded cheese. Now turn the boiler on in your oven. After the oven is ready; then put the bread in on a cookie sheet and watch closely until the cheese is nicely melted and the edges of the bread are golden brown.

Once the water is boiling than add a pinch of salt and put in the entire box of penne pasta and let the water get to a boil again set your timer for 10 minutes, you want the pasta to be al dente. When the chicken is fully cooked than simply pour the entire jar of Alfredo sauce over the chicken and turn the burner to low. After the pasta is cooked, then strain and add to the chicken and Alfredo sauce and mix easily and let cook for 10 minutes on low. You will then plate and sprinkle with some Parmesan and a couple pieces of the garlic cheese bread and viola.

You can also make a nice Caesar salad to go along with it nicely if you like, it compliments it wonderfully.

How to Cook BBQ Chicken

So, you want to know how to cook BBQ Chicken? This is one of the best summer foods available, but can also be a special treat all year round! The secret to how to cook BBQ chicken is simple...

...Cook over low heat, brush on the sauce after the chicken has cooked, and then serve. If you baste with barbecue sauce while cooking you may burn the sugars in the sauce and create a black, bitter barbecued chicken.

\"chicken Recipe\"

That's it! Simple wasn't it?! But, if you want more detail, read on...

How to Cook BBQ Chicken

Great barbecued chicken, with moist, tender succulent meat and sticky smoky skin, is made by cooking over low heat using a grill. You can get a great depth of flavour by using a spicy barbeque rub on the chicken before grilling. Salt and pepper can also be used in the same way. Salt will aid in keeping the moisture in the chicken while grilling and pepper will add to the aroma and bite.

Preparing the charcoal

A grilling temperature between 230° and 250°F, is optimal, to achieve this, stack charcoal in a pile in the centre of grill. Douse with lighter fluid and let it soak in. Light and leave it alone until grey ash has covered all visible charcoal. Spread out charcoal into an even layer and when it has an even layer of ash approximately 1/2 the depth of a charcoal briquette you are ready to grill. The actual grill should be at about 4 or 5 inches above the coals.

Slowly cook the chicken until internal temperature is approximately 170 degrees and then add a BBQ sauce of your choice. Cook for another 5 minutes to allow the sauce to stick to the chicken and then remove from the heat.

BBQ Chicken Recipe

Now, here's a great little recipe for "Honey BBQ Chicken", which you don't need to cook on the BBQ; it's especially great for those wintery days of the year to remind you of summer!

  • Chicken wings
  • Seasoned salt
  • Adobo
  • Garlic salt
  • Garlic powder
  • Honey
  • BBQ sauce
  • Oil
  • Salt and flour
  • Grated Almonds

Put the oil in the frying pan and turn the stove to medium heat while you season your chicken.

Put a little bit of salt all over the chicken and let it stand for about 10 minutes; the salt opens the holes in the skin of the chicken and will allow the other seasonings to permeate.

Sprinkle enough, but not too much, of each listed seasoning over the chicken.

Put some flour inside a medium sized bowl and add a little bit of each of the seasonings (also sprinkle with some grated almonds). Make sure that there is enough flour in the bowl to coat all the chicken pieces.

Check to make sure that the oil in the frying pan is hot and dip your chicken into the flour, covering it all over, then transfer it into the frying pan.

Let the chicken cook in the oil until it is golden brown all over, then poke a fork through the chicken to see if it's cooked, there shouldn't be any pink coloured meat and the juices should run clear.

Mix the BBQ sauce and honey together in a medium-sized bowl.

Preheat the oven. Take the chicken out of the pan and put it into the Honey BBQ sauce, then put it in the oven on a baking pan for about 6-8 minutes. Then serve.

So there you have it... all you need to know about how to cook BBQ chicken, for summer or winter!

Free Homemade Dog Food Recipes

The current crisis in our pet food supply has many of us looking for homemade dog food recipes for our beloved pets. I have been cooking for our dog for many years and find that he likes mostly the same foods that we do. Each animal has his own preferences, just like we do. For instance, our Oscar will not eat tomatoes, but Bonnie loves them. Use these recipes as a starting place for homemade dog food recipes. Then, as you discover your pets preferences you can customize them more. One caution: you should not serve onion or chocolate to dogs as they contain substances that can be toxic to dogs.

Some veterinarians prefer raw meat for our pets. I prefer to cook the meat because of concerns over E Coli and other bacterial contamination. If you wish to use raw meat, do not use ground meat. The grinding process increases the possibility of contamination by providing more surface area for the bacteria to grow.

Canine Meat and Grain Menu

Free Homemade Dog Food Recipes

2 cups cooked brown rice
2/3 cup Lean beef
2 teaspoons lard -- or veggie oil
1/2 cup vegetables -- no onion*

Mix all together. You can serve the beef raw if you use chunks of beef. Do not serve ground beef raw, the grinding process increases the chances of bacterial contamination. Use any vegetables you like. You will find over time that your dog will leave any vegetables he does not like. Mix the above. Serve slightly warm, but not hot.

Chow Chow Chicken

You must remove the meat from the bones in this recipe. Chicken bones can easily splinter and cause choking problems in dogs.

2 chicken thighs -- or white meat
1 stalk celery -- sliced thick
3 carrot -- peeled and halved
2 small potatoes -- peeled and cubed
2 cups rice -- uncooked

Place chicken pieces in large pot. Cover with cold water (5 -6 cups). Add carrots, celery, and potatoes to water. Add salt to taste if you want. Cover and simmer on low heat about 2 hours until the chicken becomes tender. Add the rice, cover and cook over low heat for about 30 minutes until the rice is tender and most of the liquid is absorbed. Remove soup from heat. Pull the chicken meat off the bone ( it will practically fall off), discard bones. Return shredded pieces to pot. Stir well. Let cool. Store in the refrigerator or freeze.

8 to 10 tablespoons water
2 jars baby food meat, strained

Mix all ingredients together and knead for 3 min. Roll out to about 1/2 inch thick. Use a dog bone shaped cookie cutter, and place biscuits on an ungreased baking sheet. Bake in preheated oven at 350 degrees for 20 to 25 min.

Makes approximately 2 dozen doggie biscuits

Bacon Bites for Dogs

6 slices cooked bacon -- crumbled
4 eggs -- well beaten
1/8 cup bacon grease
1 cup water
1/2 cup powdered milk -- non-fat
2 cup graham flour
2 cup wheat germ
1/2 cup cornmeal

Mix ingredients with a strong spoon; drop heaping tablespoonfuls onto a greased baking sheet. Bake in a 350 oven for 15 minutes. Turn off oven and leave cookies on baking sheet in the oven overnight to dry out.

Ace's Favorite Cheesy Dog Biscuits

1 1/2 cups whole wheat flour
1 1/4 cups grated cheddar cheese
1/4 pound margarine -- corn oil
1 clove garlic -- crushed
1 pinch salt
1/4 cup Milk -- or as needed

Grate the cheese into a bowl and let stand until it reaches room temperature. Cream the cheese with the softened margarine, garlic, salt and flour. Add enough milk to form into a ball.

Chill for 1/2 hour. Roll onto floured board. Cut into shapes and bake at 375 degrees for 15 minutes or until slightly brown, and firm.

How to Pan Fry Filet Mignon

Filet mignon is a tender steak. A well-cooked filet mignon will make you close your eyes in rapture, savoring the amazing flavor and it is many people's favorite cut of meat. This boneless steak comes from the tenderloin of a cow and it is usually cut into one or two inch thick portions. This is not a cheap cut of steak so you will not want to ruin it by overcooking it or cooking it wrong! That is why learning how to pan fry filet mignon is so important.

At times, it is nice to enjoy a southern fried chicken recipe but if you are celebrating a special occasion or you want to impress your loved one with something elegant, you cannot go wrong with a classic filet mignon.

\"chicken Recipe\"

Sometimes this cut of meat is wrapped in bacon because it is relatively lean. The fat from the bacon is a good substitute for the missing fat. If you do not want to use bacon, get pink steaks instead of red ones. The lighter the color, the more marbling (and therefore fat) the steak contains.

How to Pan Fry Filet Mignon

Filet mignon is not difficult to cook but you do need to use a high heat, whether you roast, pan fry, grill, or broil it. Because of the low fat levels, this cut of meat is prone to drying out if you overcook it so do not cook it for too long. As long as you keep these two tips in mind - a high heat and a short cooking time - your meat should come out perfect, whichever recipe you follow.

Recipe for Pan Fried Filet Mignon with a Red Wine Sauce

This recipe is suitable for cooking novices who want to impress people with a classic dish. It is easy to make and making the dish in a pan means you can keep an eye on it all the time.

Serve this recipe with French fries and glazed carrots. Some romaine salad on the side with a blue cheese dressing is also a nice side dish for this. This recipe serves four people.

What you will need:

  • 4 filet mignon steaks, 4 oz each
  • 4 tablespoons (half a stick) chilled butter
  • 1 tablespoon Dijon mustard
  • 1/3 cup chopped fresh parsley
  • 1 tablespoon capers
  • 1/3 cup chopped shallots
  • 2/3 cup Cabernet Sauvignon or similar red wine

How to make it:

Melt a tablespoon of the butter in a skillet over a moderately high heat. Sprinkle salt and pepper over both sides of the meat, then pan fry them. The steaks will need about four minutes per side for medium.

Put each one on a plate covered loosely with aluminum foil. Melt another tablespoon of butter in the skillet and saute the shallots for a minute. Add the capers, mustard and wine and simmer the sauce for two minutes or until it thickens a bit.

Stir in the parsley and turn the heat down to moderately low. Whisk in the rest of the butter, and then add salt and pepper to the sauce to season it. Spoon it over the meat and serve.

Oven Baked Whole Chicken

Whether you are entertaining or just feeding your family a nice meal you may end up agonizing for hours over what to serve as an entrée. Chicken is always a good choice.

Oven baked whole chicken is an elegant dish that's easy to make. Most people like it.

\"chicken Recipes\"

It can be stuffed with many variations of filling or packed with vegetables for the weight conscious. If you are in the mood for a bit spicier flavor you can use any of the barbecued chicken recipes to prepare your bird.

Oven Baked Whole Chicken

Inexpensive Yet Elegant Entree

Chicken can be prepared in a number of convenient ways so it fits your busy lifestyle. It can even be purchased already cooked at supermarkets or take-out restaurants.

But why would you want to pay extra for someone else to cook your bird when it is so easy to do yourself?

A whole bird will only cost a few dollars and can be ready for the table in less than two hours. When you serve an oven baked whole chicken your entire house will be swathed in its succulent aroma.

Let's look at a few ways to prepare an oven baked whole chicken.

Baked Chicken Temperature

Baked chicken temperature when finished should be at least 165 degrees Fahrenheit inside the bird. Since chicken is a potential source of salmonella poisoning as well as other complicating problems you may want to assure it gets to 170 degrees. Allowing the bird to "rest" for 10 minutes before serving should allow the internal temperature to rise to 180 degrees because it continues cooking during this rest period.

If you don't have a meat thermometer you can visually check your bird by giving the leg a shake. It should move easily at the joint where it joins the body. Just because the bird is a nice golden brown does not mean it is cooked through.

This is especially true with larger roasters. You may want to cut the skin and meat at the leg joint where it meets the body. You'll see clear juice if it is done. If you see flowing, deep red blood in the meat roast it longer.

Most oven baked whole chickens are cooked in a 350-375 degree oven for 1 1/2 to 2 hours. Because of the wide variation of roaster sizes no specific cooking time can be given. Use a meat thermometer inserted into the thickest part of the bird's inner thigh making sure it is not in contact with the bone or visually check it as described above.

Oven Baked Whole Chicken

This recipe is for a bird without stuffing.

Such a recipe is necessary when cooking for a person with a wheat allergy or dieting to lose weight. Stuffing the bird with vegetables as described below is another alternative if faced with this situation.

*Rinse the chicken with cool water inside and out then pat dry with paper towels.
*Place the chicken in a roasting pan.
*Smear the chicken with butter and place a cover on the roasting pan.
*Bake in a 350-375 degree oven for 1 1/2 to 2 hours as described above.
*Remove the cover during the last 20 minutes of cooking time to allow the skin to brown.

Barbequed Chicken Recipes

Barbequed chicken recipes use this same basic format (but leave the cover off the entire time). Baste the bird with your favorite barbeque sauce every 15 minutes until done.

Stuffed Oven Baked Whole Chicken

You can use any filling you like to stuff your bird. Or you can try this recipe.

*Place 3 eggs into a blender with a medium onion (skin removed), a medium apple (cored with seeds removed), and 3 sticks of celery.
*Add pepper to taste.
*Blend until liquefied.
*Pour over cubed whole grain bread that has dried overnight or in a 200-degree oven for one hour.
*Gently fold egg mixture into bread cubes.
*Gently stuff the cavity of the chicken with the filling.
*DO NOT compress the bread cubes!

Cook as described above allowing additional cooking time for the stuffing to cook thoroughly.

You can also stuff your bird with a variety of vegetables such as peeled and cubed potatoes, onion, carrots, turnips, or rutabaga seasoned with melted butter, pepper, seasoned salt, oregano, or thyme to taste. Cook as described above.

You now have a few oven baked whole chicken recipes to get you started. Once you have prepared a bird or two you will begin to form your own ideas about what you prefer in your own recipes.

Good cheap food can be transformed into good health foods with the help of a fine recipe.

Chinese Fried Rice - How to Make Fried Rice

Chinese fried rice is one of the most popular dishes ordered from Chinese takeout restaurants and a lot of people wonder how to get the great flavor and texture of this amazing dish. If you enjoy making fried recipes like a southern fried chicken recipe or chicken fried steak, you will enjoy making this tasty Chinese dish. Fried rice is so simple to make and it is the perfect accompaniment to any Chinese meat, fish, or chicken dish.

This recipe is a great way to combine leftovers. Using leftovers means there are infinite possibilities if you want to make something really flavorful and different countries have their own versions of this dish. Indonesian fried rice is different from the Thai style dish, for example.

\"chicken Recipe\"

Cooking Tips for This Delicious Dish

Chinese Fried Rice - How to Make Fried Rice

Use steamed or boiled white rice to make this dish. The key to a good dish is to use chilled rice. If you use it freshly cooked, it will not taste authentic or have a good texture. Chilling it overnight gets rid of excess moisture and makes the grains firm and therefore easier to separate. Cooking with fresh grains means you will get mushy results. If you do not have a whole day, make sure it can cool for a few hours somewhere cool before you use it.

The wok has to be very hot so the soy sauce gives flavor to the dish, rather than making it soggy. Also, a layer of oil in a hot wok will dance around and create a nonstick coating. If the wok is not sufficiently hot, the contents will stick to it.

You can use any leftovers you want in this recipe. What about some leftover bacon or ham from breakfast, some chopped chicken from yesterday's dinner or some leftover carrots? Do not use anything too wet or in a sauce, else the dish will go mushy. Garlic, ginger, and salt are good seasonings and you can also add some chili powder to spice the dish up.

The Recipe - Step by Step

This basic fried rice recipe can be modified, as you like. If you are going to add more ingredients to it, you should use three eggs instead of two. This recipe serves four to six people as a side dish. Feel free to add chili powder, ginger, garlic or anything else you fancy.

What you will need:

  • 4 cups cold cooked rice
  • 1 finely chopped green onion
  • 4 tablespoons cooking oil
  • 2 tablespoons oyster sauce or soy sauce
  • Salt and pepper, to taste
  • 2 eggs

How to make it:

Beat the eggs with some salt and pepper. Heat half the oil in a wok, and then add the eggs. Cook them, stirring all the time, until they are scrambled but still wet. Take out the eggs and wipe out the pan with paper towels.

Add the rest of the oil and stir fry the rice for a few minutes. Use a wooden spoon or a pair of chopsticks to stir the grains and separate them. Stir in the oyster sauce or soy sauce, and then add the eggs back in the pan. Mix well and stir in the green onion. Adjust the seasonings and serve hot.

How Long Does a Perfectly Roasted Chicken Need to Cook?

Although cooking chicken can be a simple task, there are many determining factors that lead to a perfectly juicy and tender well cooked bird. Chicken is probably one of the most popular meats around for it offers a range of versatility and possibilities! You can boil it, grill it, broil it, bake it, roast it, fry it, sauté it, rotisserie it and stir fry it and always end up with a delicious meal. However, one of the big challenges with chicken is that it must always be well cooked to prevent food borne illnesses. You can never eat chicken rare or medium rare. If the meat is pink cook it longer. Raw chicken can make you very sick. OK, so why is this such a big deal? It's a big deal because chicken, specially the white meat breast area, tends to be overcooked and dry. It does not have to be! I would like to concentrate on roasted whole chickens in this article as these seem to be the ones that are hardest to perfect. Because of the way a chicken is shaped, it is very easy to end up with overcooked, stringy breast meat; undercooked leg and thigh meat; and inedible, chewy skin.

A well roasted chicken should have juicy tender breast meat, fully cooked dark meat and perfectly crisp and well seasoned skin. So how do we end up with such a wonderful production? The very first thing you need to do is preheat your oven with the roasting pan inside. Keep the rack out of the oven to use later. Since everyone's oven is different I would say a good rule of thumb is to heat it for a good 20 minutes before you start roasting. I have roasted many a chicken in my life and I can tell you that 375 degrees Fahrenheit (190 degrees Celsius) is where my chicken has come out with the best results. Higher heat cooks the bird faster but tends to scorch the skin and dry up the meat; lower heat - slow and low in the beginning and high in the end - ends up in dry meat as well. So, preheat your oven to 375 degrees and let's get the chicken ready! Remove the giblets and the neck from the cavity. Unless you are planning on using them (let's say to make gravy for instance) throw them away. Wash the chicken inside and out and pat dry it well. You want nicely dried chicken skin. Next, trim off the excess fat. Throw that away. Starting at the neck, insert your fingers under the skin and gently push away the skin from the breast meat. Generously season the inside and outside of the chicken with salt and pepper.

\"chicken Recipe\"

Melt some butter in a pan or microwave and brush melted butter directly on the breast and on the skin. Place the chicken sideways on the roasting rack. Open the oven and place the rack into the roasting pan. Cook it like this for 20 minutes. Flip the chicken on to its other side and cook for an extra 20 minutes. Finally, turn the chicken onto its back, breast meat up and cook for an additional 20 minutes. You need to make sure the internal temperature is 165 to 170 degrees. Another way to check it is by pulling the thigh away from the body. If the juices run clear and not pink or red, the chicken is probably done. The average roasting chicken is between 3 and 3 ½ pounds. This will render approximately 3 to 3 ½ cups of cooked meat. I am assuming that you will be roasting a whole chicken and not a butterflied one- a chicken who has had the backbone removed. Butterflied chicken will cook faster. At any rate, if you are roasting a larger bird make sure to adjust the cooking time. 20 to 25 minutes per pound is a great rule of thumb! Good luck!

How to Make the Best Chicken Salad Recipe

Are you looking for the best chicken salad recipe? Are you wondering how to make chicken salad? It is really very simple!

There are many varieties of chicken salad that you can make. First, you need to decide what type you want to make. Next, you can look for a recipe and gather your ingredients. Once you learn the basic recipe you can go on from there to create your own variations.

\"recipe Chicken\"

Here is a very simple recipe for chicken salad for sandwiches:

How to Make the Best Chicken Salad Recipe

2 cans white meat chicken (drained)
1/2 cup Miracle Whip
1 stalk celery, thinly sliced
3 slices green onion, diced (optional)
salt and pepper to taste

Empty chicken into a large bowl. Flake apart with a fork. Next, combine with celery and onion. Add the Miracle Whip a little at a time until well combined. Add in Salt and Pepper to taste.

It doesn't get much easier than this! Now, for added variety to this basic recipe you can substitute canned chicken for real cooked chicken (shredded), about 2 cups. You can also add other items of your choice. Some ideas are: chopped apple, sliced red or green grapes, water chestnuts, use 1 can chicken and 1 can tuna vs 2 cans chicken, etc... The ideas are limited to your imagination and palette.

Now you can really change things up a bit and create very different versions of chicken salad. Take for example this:

Chinese Chicken Salad Recipe

1 (3 ounce) package ramen noodle soup mix
1/2 package coleslaw blend (or 1/2 of a cabbage)
1 Rotisserie chicken -shredded
4 green onions, sliced
1/2 cup Light Asian Toasted Sesame dressing
1 tablespoon creamy peanut butter
handful of peanuts

Break the noodles into small pieces in a large bowl. Add the coleslaw (or cabbage) and chicken and onions. Mix ingredients together lightly.

Whisk the dressing and the peanut butter until combined. Add to salad and toss to coat. Top with peanuts.

Another style is Waldorf Chicken Salad which combines fruits and nuts into the chicken salad:

Waldorf Chicken Salad Recipe

2 cups Cooked & Cubed Chicken
1/2 cup Chopped Apple - I prefer gala or granny smith
1/2 cup Chopped Celery
2 Tbsp Raisins
1/4 cup Walnuts
1/2 cup Mayonnaise or Miracle Whip Salad Dressing

Shredded Carrot, if desired for garnish

Mix all ingredients until combined. Garnish with shredded carrots, if desired. Chill before serving.

Yet another type is Pasta Chicken Salad which includes some form of cooked pasta, chicken and generally vegetables and a dressing.

Basic Chicken Pasta Salad Recipe

3 Chicken Breasts
2 cups Rotini or Shell Pasta (cooked, rinsed and cooled)
1/2 Red Bell Pepper
1/2 Green Bell Pepper
8-10 cherry tomatoes (halved)
1/4 cup Feta cheese (crumbled)
1/4 Caesar Salad Dressing (more or less to taste and to coat salad)

Cook chicken until internal temperature reaches 165 degrees or more. You can boil it, grill it, etc.. When chicken is done, allow to cool in refrigerator. Then, chop into small pieces.

Chop peppers and add to tomatoes in large bowl. Add chicken, pasta and feta to large bowl. Add Caesar salad dressing and mix well.

Refrigerate until needed.

Is Pasta Healthy Or Fattening?

Many people who are trying to lose weight wonder is pasta healthy or fattening? Pasta, like many foods high in carbohydrates, often gets a bad reputation for being fattening; however, this does not have to be true.

Carbohydrates, though recently made out to be villains, are actually necessary to keep your body and mind running smoothly. When carbohydrates are broken down they provide a major source of glucose. Glucose is the primary source of energy for your body and the only source of energy for your brain. Many people who have tried to stick to very low-carb diets have suffered from low energy and bad moods. I know I would be in a bad mood if I never got to eat my favorite pastas!

\"recipe Chicken\"

Consuming too many carbohydrates can be fattening, but pasta itself is not fattening; cooked pasta has only about 200 calories per cup. Where you really get into trouble is with your pasta sauce. Pasta sauces that contain high calorie fatty meats, creams, cheese and other fattening ingredients can really make a pasta dish fattening. Tomato pasta sauces are usually not very fattening at all! Americans also have a tendency to eat too much pasta - portion control is important when controlling calories. Italians traditionally serve pasta as a side dish or as one course of a multi-course meal; not in the large mounds that are so common in the United States.

Is Pasta Healthy Or Fattening?

Along with being fattening, pasta has been criticized for being a simple carbohydrates and lumped into the same category as cake, pastries and white bread. The problem with all of these simple carbohydrates is that they spike your blood sugar resulting in excess insulin being secreted which encourages weight gain and a subsequent energy crash. Simple carbohydrates have a high Glycemic Index (GI) which is a number used to measure how quickly the body's blood sugar level rises after the ingestion of a food. The good news is that Pasta has a GI of 41, which is similar to pears and lower than many types of bread. And one easy way to lower the GI of pasta is to cook it like the Italians - "al dente".

Most pasta today is made from semolina flour obtained from durum wheat. This creates a firm dough which in turn also lowers the GI, while also providing a good source of nutrition. Homemade and dried pasta contain plenty of B vitamins, folic acid and iron. It's low in sodium and, despite a prevalent myth, pasta is not high in cholesterol even though it is usually made with eggs. It was once thought that egg consumption needed to be drastically reduced due to their high cholesterol content, but subsequent research has shown eggs are quite healthy in moderation and greatly contribute to the health benefits of pasta. For those on a strict diet, however, pasta can be made without eggs, while the flour and olive oil content still make this pasta healthy.

Another option is to use dried pasta. This pasta usually does not contain eggs or oil but is made from 100% semolina flour and is quite firm when cooked.  The firmness of this pasta helps lower the GI index to less than bread, potatoes and white rice while still providing vitamin B, fiber and iron. Dried pasta can be stored up to 3 years, but be sure not to store your pasta in glass containers as the sunlight depletes the vitamin B.

Is Pasta healthy in other ways too?

Yes, homemade pasta can be quite healthy. It is not difficult to learn how to make pasta and homemade Pasta can be made even more nutritious with the inclusion of whole wheat flour, spinach, garlic and herbs that add to the vitamin, mineral and fiber content of the pasta. Fiber is another nutrient often lost in modern diets, but fiber is necessary for digestive health, hormonal balance and the prevention of certain types of cancers.

There are many easy pasta recipes which make this nutritious food very convenient for modern busy cooks as well. When trying to eat healthier, you don't have to wonder "is pasta healthy" since there are many ways to prepare pasta that are. So go ahead and enjoy your pasta without guilt, just remember to go easy on the fattening meats and sauces and enjoy your pasta in moderation!

Tomato Cages - Buy Or Make Tomato Cages?

Many folks like to build their own tomato cages. There are a few advantages to making your own cages. If you buy materials like a roll of chicken wire or reinforcing wire, the cost for several cages is much lower than buying individual cages, unless you buy them in bulk.

The most common way to build tomato cages is to use either a chicken wire fence or concrete reinforcing wire. You can find either of these with a mesh that's large enough to put your hand through, which will allow easy harvesting of the tomatoes when the time comes. The fencing is looped back on itself in a way that forms a large tube, which is set over the tomato plant and it grows up inside the cage. With this approach there is not as much need to tie up and prune the plant, the plants will just climb through the holes and naturally support themselves.

\"Chicken Wire Fence\"

Another way to build cages is to use PVC pipes. These can be very durable and sturdy, as you can glue up a permanent structure. Alternatively, if you just snug the parts together it will often be sturdy enough, but will easily disassemble for storage, which is one of the biggest problems with tomato cages. And many people will make cages from wood, although those tend to not last as long.

Tomato Cages - Buy Or Make Tomato Cages?

There are other similar techniques like the Japanese tomato ring (which is actually an American invention) that combine a large home made ring with some intensive gardening techniques to boost the yields of your tomato garden. This is not something you will find you can do with a commercially produced tomato cage.

Another common way to support tomatoes is to build a trellis with a pipe that runs along the row of tomatoes and then strings are tied to it and the other end of the string is anchored in the ground near the tomato plant. Then the tomatoes are tied to the string and they can grow as high as they like and just climb the string.

But one advantage to buying tomato cages or supports is the wide difference in how the problem of supporting a tomato plant is approached. You can find some that are simple cages, with 3 or 4 rings in an expanding radius as you move to the top. There are some spirals that are simply stuck in the ground, and the tomato plant is tied to it as they grow. SImple plastic or bamboo stakes are often used.

There are square tomato cages, that are actually four sections of mesh that form a small square, but have the advantage of unhooking and folding flat for storage. The are 3 sided versions of this same basic idea as well.

Of course, if you are using a hanging tomato planter, then the whole problem of which cage to use is not an issue, as there is no need for tomato cages for plants that are hanging from a container. There are other advantages to hanging planters as well...

Electric Fencing for Chickens: The Positives and Negatives

The use of electric fencing for chickens has become a popular form of poultry protection and containment, in fact the wide availability of such fencing has transformed the way many owners now rear their poultry.

When it comes to chickens, fencing is used by owners not so much to keep chickens contained, as they are often left to roam as they please, but to keep their many predators from attacking them.

\"Chicken Wire Fence\"

The positives of electric fencing for chickens:

Electric Fencing for Chickens: The Positives and Negatives

Unlike traditional chicken wire, which is normally wrapped so tightly when the enclosure is built that moving it is almost impossible, electric netting is fully portable and easily transferred to other areas. This is particularly useful when there is a need to relocate some chickens, or you have a new flock arriving that needs to be kept separate.

Tight Netting

Foxes are by far the most frequent predator of chickens, keeping them out is vital. Fencing that is designed for larger animals will not suit your chickens because the gaps between the wires are far too wide and will allow the fox through or the chickens out. Electric fencing for chickens is designed in a netted structure with very tough, small holes which are impossible for a fox to fit through thereby keeping your poultry safe.

Electric fencing is made from newer, purpose-built materials that are able to withstand the wear and tear of the elements, animals and predators. This makes electric fencing particularly good for keeping chickens as there are far fewer repairs required, predators are unlikely to prise or force gaps in the fence as they will receive a shock.

The negatives:

Chicken enclosures are often small so the cost of buying electric fencing for chickens can be quite expensive if you choose the wrong supplier. Most suppliers will work with you to ensure you get the fence you need, but off the shelf products often dictate lengths and dimensions meaning you can end up with more than you need. More traditional fencing solutions can also offer cheaper alternatives especially for small enclosures.

Intermittent Power

The major flaw with such fencing is that by its very nature it requires electricity. In the event of a power cut, intermittent power or a broken fence link, predators can get through and attack your animals. Fortunately electric netting is just as reliable as traditional netting even without a current, but if you have spent extra for the fence then its a pain when it malfunctions. This encourages predators to try their luck, either attempting to jump or prise the netting.

Even though there are negatives in using electric fencing for chickens, the benefits, in my opinion, far outweigh those negatives. This type of fencing is very reliable these days and offers any chicken owner a fantastic way of protecting your poultry.

5 Tips To Building A Poultry Coop

You are reading this article because you want to build a poultry coop. Though by far the most popular type of poultry to raise is the chicken for obvious reasons they are a constant supply of high protein eggs. However whether building a chicken coop or a coop for another type of bird the following tips are essential.

Tip #1 Protection.

\"Chicken Wire Fence\"

Though a chicken coop also feeds chickens and is designed to make them feel safe and there for lay more eggs the most basic reason why we create chicken coops is to protect our flocks. To protect against predators you need to get a strong chicken wire fence that goes a foot into the ground you also want good materials and make sure that your chickens are in their coop at night.

5 Tips To Building A Poultry Coop

But to protect against the elements (as well as predators) make sure that your windows have good screening. Also make sure that they all can be opened and closed as needed for ventilation and protection. You should build the coop on higher ground so that it dries faster after a rain.

Tip 2# General.

These are just some quick general tips that will make your chicken coop a lot better. You should install doors that open inwards not outwards. Also make all your windows slide to the side otherwise your chickens might open them and roost. Also you should make the floor slanted slightly towards the door so its easier to clean the inside of the coop.

Tip #3 Ventilation.

Ventilation is very important in a coop. It helps lower the build up of moisture as chickens should live in nice dry climates. It also helps reduce ammonia buildup which will poison your chickens without proper air flow. Plus if your coop really doesn't have any ventilation then your chickens could die without enough oxygen (though this is very unlikely). But of course you still want to protect the inside of your coop from the elements. To do this you can probably just keep the windows open most of the time. Also having insulation installed in your walls is a must. As dampness that might creep into the walls could be very bad for your chickens health.

Tip #4 Water and Food.

You should always install feeders and waterers where the entire flock will have an easy time reaching. However because chickens have such a strong urge to scratch and peck if you put the feeder to low then your chickens will spread their food all over the coop and that means more cleaning! Because of this it is best to install the feeder just a little higher then you would naturally so that they have to stretch their necks to eat. Same thing with water (you don't want chickens stepping in their water).

Tip #5 Lighting.

To make sure that your chickens are warm during the winter months I always install a heater lamp somewhere in the coop and just turn it on during winter. Also a great tip for extra light is to place the windows facing south. As this will give the chickens warmth and light throughout the day.

Lighting is more important then most people realize. However a chicken will only lay their eggs if they have a good dosage of light. Indeed their entire day is dictated by light. When the sun first rises they get up and go out to eat and lay their eggs. Then after they lay their eggs they just walk around and eat. Then at night they go right back to the roost.

How to make it:

Sprinkle salt and pepper over the chicken and then dredge them in flour, shaking off the excess. Preheat a skillet over a medium heat until it can evaporate droplets of water you drop into it. Pour a little olive oil into the pan. You could also use canola oil or any fat with a high smoke point. You should coat the bottom of the pan with oil but that is enough.

Add the chicken breasts to the hot pan and sear them for a couple of minutes until they are golden brown. Turn them over and sear the other side. If you are going to double this recipe, do two chicken breasts at a time. Crowding the skillet means you will not be able to brown all your chicken properly.

Turn the heat down to low, and then add chicken broth. It needs to come a third of the way up the chicken breast. If you add to much you will be boiling the chicken, which is not what you want. Add the onions, rosemary, oregano, garlic and lemon.

Cover the pan with a lid that fits tightly and cook the chicken breasts over a low heat until they are done. They are done when a meat thermometer reads 165 degrees F in the thickest part of the chicken breast. If you do not have a meat thermometer, cut into the chicken. It is done when it is white all the way through with no hint of pink in the middle.

Chicken Pepperoni - Aurora's Recipe

Aurora's recipe

Remember the movie Seems Like Old Times with Chevy Chase and Goldie Hawn? The Governor is invited over for his favorite dinner, chicken pepperoni, made by the maid, Aurora. But Aurora has to have her feet scrapped and cannot be there to cook the meal. That's when the fun starts. After I saw the movie, I had to try the dish and over the years I have hopefully improved on the original recipe I found. See what you think of my chicken pepperoni.

\"recipe Chicken\"

Ingredients (6 servings):

Chicken Pepperoni - Aurora's Recipe

  • 3 tablespoons - extra virgin olive oil
  • 1 - large onion, chopped
  • 2 cloves - garlic, minced
  • 1 28-ounce can - diced tomatoes (I like Hunt's brand)
  • 1 6-ounce can - tomato paste (Hunt's brand preferably)
  • 8 ounces - button mushrooms, sliced
  • 2 tablespoons - fresh basil, chopped
  • 9 ounce - pepperoni stick (remove cover around the pepperoni if it has one) cut into 1/4-inch slices and then quarter the slices
  • 1/3 cup - all purpose flour
  • 1 tablespoon - fresh oregano
  • 1 teaspoon - salt
  • 1 teaspoon - pepper
  • 2 pounds - skinless boneless chicken breasts cut into 1/2-inch cubes
  • 2 tablespoons - extra virgin olive oil
  • 1/3 cup - white wine (e.g., chardonnay)
  • 1 pound - pasta (I prefer rotini noodles for this dish)

Heat the 3 tablespoons of olive oil in a large skillet over medium heat. Add the onions and cook until soft and translucent, about 5 minutes. Add the garlic and cook for one minute. Add the tomatoes, tomato paste, mushrooms, and basil and simmer over low heat for about 5 to 10 minutes (mix well). Set aside.

Meanwhile, place the pepperoni in another smaller frying pan and cook over medium heat for about 10 minutes to cook the fat off. With a slotted spoon, remove the pepperoni and add it to the sauce. Discard the oil.

Add the flour to a small bowl along with the oregano, salt, and pepper and mix. Add the chicken to the flour mixture to coat. Add any remaining flour mixture directly to the sauce.

Heat the 2 tablespoons of olive oil in a large Dutch oven over high heat and brown the chicken, about 15 minutes. Add the white wine to the chicken and cook off the alcohol, about 2 minutes. Add the tomato sauce and pepperoni to the chicken and wine, cover and simmer on medium-low heat for 15 minutes. Stir periodically

Meanwhile, cook the pasta in salted boiling water for about 10 minutes.

Spoon the sauce over individual servings of the pasta. Enjoy!

20 Ways to Eliminate Garden Pests - Safely and Inexpensively

20 Ways to Eliminate Garden Pests - Safely and Inexpensively

Insects, slugs, birds, rabbits and deer are just a few creatures that can threaten the well-being of your garden's plants. But, you don't need to use expensive and potentially dangerous chemicals to protect your garden from the pests that threaten to destroy it. Instead, you can use common household items and ingredients to do the job.

\"Chicken Wire Fence\"

1.       Keep insects away from your cucumbers and other tasty vegetables, mix small scraps of aluminum foil into your mulch. An added benefit is that the foil will help reflect light back onto your plants.
2.       Deter moles by pouring used cat litter down their tunnels and they'll be looking for a new home.
3.       Scare away the furry and feathered fruit bandits by hanging pairs of pie tins in your fruit trees. The reflection and the noise the pans make when the hit each other will help scare the pests away.
4.       Keep cutworms, slugs & snails at bay . Just scatter the ashes from your fireplace or campfire around your garden - the ash will stick to their bodies and draw the moisture out of them.
5.       Discourage aphids from moving into your garden by burying cut up pieces of banana peel 1-2 inches below the surface of aphid-prone plants.
6.       Get rid of slugs and snails. In the evening, bury a shallow container so the top is level with the soil and fill with warm, flat beer. In the morning, you'll have a drunk- tank full of dead slugs.
7.       Protect new seedlings from furry pests, but still allow light and water in. Place inverted baskets over the seedlings and be sure to anchor them firmly in place.
8.       Protect the trunks of your young fruit trees from nibbling rodents by wrapping the trunk in a double layer of aluminum foil in late autumn. Don't forget to remove the foil when spring comes.
9.       Trap pesky yellow jackets, wasps and moths so they don't bug you. Use an empty 2-liter soda bottle or other plastic bottle and fill it with water sweetened with sugar. Cut a small hole near the top of the bottle and hang it where the bugs seem to hang out. When the trap is full, throw it out and replace with a new one.
10.   Keep moles out of your garden and yard with castor oil. Mix ½ cup castor oil and 2 gallons (7.5 liters) water and poor on the mole hill. While it won't kill the moles, it will send them packing.
11.   Repel ants & slugs with powdered chalk scattered around garden plants.
12.   Keep mosquitoes, gnats and even ticks at bay by putting chest rub on your arms and legs.
13.   Protect the fruit in your trees from the birds that always seem to get first pick by hanging strips of aluminum foil from the branches using fishing line or something similar.
14.   Keep deer out of your garden by staking chicken wire flat on the ground around the perimeter of the garden bed. Deer don't like to walk on it and it's not ugly to look at like chicken wire fence.
15.   Use plants as a natural pest control for moles. There are certain plants that moles just don't like. The most common are daffodils and alliums.
16.   Keep the neighborhood cats from using your garden as a litter box. Spread a mixture of orange peels and coffee grounds around your plants. The pungent odor should keep the cats away and you have the added benefit of a great soil enhancer.
17.   Stop bugs from eating your plants. Just sprinkle a mixture of black pepper with flour around your plants and the bugs will find a different place to dine.
18.   Get rid of nematode worms. This microscopic parasite pierces the roots of plants and causes knots. Create an unfriendly environment for these pests by mixing 5 pounds (2 kg) of sugar for every 250 square feet (25 square meters) of garden. The microorganisms that feed on the sugar increase the organic matter in the soil, which will eliminate the nematodes.
19.   Protect your plants from rabbits, chipmunks and woodchucks. Chop up a super hot pepper (habanero for example) and mix it with 1 tablespoon ground cayenne pepper and ½ gallon (2 l.) of water. Boil the mixture for 15-20 minutes, cool, and strain through cheesecloth. Pour into a spray bottle along with 1 tablespoon of dish soap. Spray plants well once a week or sooner if it rains. The soap helps the mixture stick to the plant and the hot flavors will send the little plant munchers looking for another place to snack.
20. Let your garden's plants protect each other. The practice of companion planting has been used for centuries to repel insect pests. Some to try include heavily scented plants like basil, tansy, marigolds and sage are reputed to keep insects away.

Chicken Wire Fencing

Ideal for rabbits and chickens

This type of fencing is very cheap to supply and install, in fact it's one of the cheapest materials available.

\"Chicken Wire Fence\"

To keep the cost down to a minimum you could use split posts and thump them into the ground.

Chicken Wire Fencing

Chicken wire can also be buried underground which will stop rabbits etc from burrowing underground and escaping.

If you are going to use this type of fencing for your chickens you need to consider the height, as chickens can easily fly over 6 feet high fencing, sometimes it is necessary to make a frame up for a roof and cover this and chicken wire making a total enclosed pen.

This is very simple to do and also relatively cheap, it's just a matter of building the framework and then laying the chicken wire on the sides and roof and stapling the chicken wire to the framework.

Making a gate however is not quite as simple, I would recommend calling a fencing contractor to deal with this.

There are different grades of chicken wire you could use ordinary galvanised or plastic coated generally the colour of coated wire is green.

There are also different thicknesses/grade of wire, generally light grade-medium grade-heavy grade.

Heavy grade being the most expensive.

If this is not suitable the next stage in strength is to use stock fencing. This type of fencing is much more substantial than the actual wire is much thicker.

Stock fencing can be used again underground, ideal for keeping dogs in your boundary also great for small livestock.
