Mediterranean Chicken Recipe

I made this Mediterranean Chicken for dinner Saturday night and think it's a real keeper. It was quick, easy and delicious and was perfect served with a simple green salad.

I found it as I was flipping throughSouthern Living: Our Readers Top-Rated Recipes;(a cookbook I hadn't opened in a couple of years, which is a shame since everything I've tried from it has been good) looking for ideas for something that would be quick, easy and tasty and feel like I hit the jackpot!

It called for ingredients that I tend to have on hand - boneless skinless chicken breasts, olive oil, canned diced tomatoes, kalamata olives, dried spices, feta cheese and pasta - nothing too unusual.

Mediterranean Chicken Recipe

I made a few modifications to the recipe to accommodate our tastes. The recipe suggests that you add the feta at the end, cover and let it stand for a few minutes, which would be delicious if you like feta cheese. But since my husband isn't a fan, I left it out and put it on the table as an optional topping. I also used an extra can of diced tomatoes since I like my pasta dishes on the saucy side, especially when I know there will be leftovers requiring reheating. (It keeps them from drying out.) I replaced the dried parsley with 1 tablespoon of fresh and used 2 teaspoons of dried Italian herb mix instead of the dried basil and oregano. I also used Ronzoni Healthy Harvest penne, since it was what was what was in the pantry.

Mediterranean Chicken Recipe

Serves 4

1 pound boneless, skinless chicken breast, cut into 1 inch cubes

4 garlic cloves, minced

2 tablespoons olive oil

2 (14.5 ounce) cans diced tomatoes, undrained

1/2 cup kalamata olives, pitted and chopped

1 teaspoon dried parsley flakes (or 1 tablespoon fresh)

1 teaspoon dried basil

1 teaspoon dried oregano

salt and pepper to taste

2/3 cup feta cheese

8 ounces penne pasta (white or whole wheat)

Bring a large pot of water to boil for cooking the pasta.

Meanwhile heat the oil in a large skillet over medium-high heat. Add the chicken and garlic and cook, stirring occasionally until chicken is done, about 8 minutes. Remove the chicken from the skillet. Add the tomatoes, olives and herbs to the skillet. Reduce heat and simmer, stirring often, for about 8 to 10 minutes.

While the sauce simmers and once the pasta water comes to a boil, slowly add a big handful of salt to the boiling water and then cook the pasta according to the package instructions. When it is done, drain.

Once the sauce has simmered for about 8 to 10 minutes and thickened up, return the chicken to the skillet, stirring to combine. Sprinkle with the feta cheese and remove from the heat. Cover and let stand 5 minutes. Serve immediately over the pasta (or stir the pasta into the chicken mixture and then serve).

"Chicken Slick" - My Chicken and Pastry Recipe

When I make this recipe I may get the chicken cooked and cooled and the fat raised to the top of broth one day and finish the recipe the next day. Just depending on when I start the recipe and the time I have. Read the whole recipe first. Now make your own plan.

Cooking the Chicken First stage

  1. My free range chicken that has been cooling in frig for 24 hours. Oh so good!!!!
  2. Get out the crock pot.
  3. You may use a regular pot on stove and this is quicker so you will have to monitor the chicken more closely but do the same recipe as a crock pot.
  4. Put chicken in crock pot. Cover the chicken completely with water and cover with a lid.
  5. Cook until it starts falling off the bone.
  6. It may take 4-6 hours to cook depending on the crock pot and size and quality of chicken.
  7. Once meat is falling off the bone, I remove the chicken and place in colander with bowl underneath to catch the extra broth.
  8. Now I let the chicken and broth cool.
  9. Once the broth has cooled enough, I put the broth in pitchers, cover and the place in the frig. What I will be waiting for is the fat to rise to the top of the pitchers and the use the fat in the pastry.
  10. Next debone the chicken.
  11. If the skin is good I may put the skin aside to put in the recipe. Just depending on my mood.

Seasoning the Broth Second Stage

  1. OK every thing is ready now. The chicken is ready and the fat has raised to the top of the pitchers.
  2. Skim the fat off and place in small container and put to the side.
  3. Put the chicken broth on the stove and turn on medium heat. Bring to a gentle boil. Hold out one quart of broth and set aside.
  4. Add 1-2 stalk of celery cut up to the broth.
  5. Add 1/2 to 1 onion cut up to the broth.
  6. Add one teaspoon of salt. This can be your own preference.
  7. Add 1-2 teaspoon of paste chicken bouillon or 1-2 chicken bouillon cubes
  8. Let this cook approx 30 minutes while you are making the pastry

Pastry dough Third Stage

  1. The pastry is now ready to be made.
  2. Measure out 2 cups of all purpose flour into large bowl.
  3. Blend into the flour with a fork approximately 2 tablespoons of the congealed chicken fat that was put to the side. This should only take about 2-3 minutes.
  4. Add approximately 3/4 to one cup of set aside broth to the flour mixture.
  5. Blend and make a ball. Sometimes you may need to add a little flour or add a little more broth. Now you have pastry.
  6. Place sprinkles of flour on the counter and take a section of the ball and put in the center of the sprinkled flour.
  7. Press the balled flour down with your hands. Turn over and press again. Do this a couple of times.
  8. Then use your roller to roll out the flour to be very thin.
  9. Use the back side of a dinner knife and cut thinned pastry strips give or take about one inch wide.
  10. Pick up pasty and place on a lightly sprinkle floured plater.
  11. Take another section of pastry ball, sprinkle a little flour on the counter. Press out the pastry, roll the pastry, cut the pastry, place on plater until you finish with all the pastry.

Making pastry strips Fourth Stage

  1. Now lets get cooking again.
  2. The broth now has been cooking about 30 minutes now and bring to a medium slow boil.
  3. Gradually start putting your strips of pastry into the chicken broth one at the time. Go slowly so you do not lose your boil.
  4. After you finish adding the strips of pastry to the broth have a slow boil going and cook approx 20.
  5. At this stage I sometime may add a cup or two of frozen peas or any vegetable you wish. It is up to you.
  6. Stir the broth and pastry from time to time to prevent sticking.
  7. After the 20 minutes is up add your deboned chicken and chicken skin if you wish and cook another 10 minutes.
  8. Now you are done. Are you hungry yet?

Notes

Now you may think this recipe is too hard to make. Just don't make it hard. Do a little planning. If you are like me you don't have all day to prepare. So plan your stages. I have been making this recipe for years and is always good. After eating and you have left overs then freeze the rest. Also freeze or can any left over broth. I save the broth so I can add to the pasty after freezing cause the pastry soaks up the moisture or the slick and I like lots of chicken slick. Make the recipe to fit your taste. Also if you do not have your own chicken to use you can use a store bought chicken. It just will not be as good.

Butter chicken, as the name suggests is chicken cooked in butter and served with butter on top. So yes, a lot of butter is used in the making. Traditionally it is made from a tandoori chicken. Boneless pieces are torn from a tandoori chicken and then cooked in a tomato gravy.

Ingredients

* 300 g boneless chicken (cut into slivers)
* 500 g tomatoes (pureed, if they are too tangy, then take less)
* 100 g thick yogurt
* 1 Tbsp lime juice
* 1 Tbsp of Ginger paste
* 1 Tbsp Garlic paste
* 1 Tsp Turmeric powder
* 1 Tsp Garam masala
* 2 Tsp Tandoori Masala Powder (easily available at any Indian grocery store)
* 1 Tsp red chili powder
* 2 cloves
* 1 green cardamom
* 1 inch stick of cinnamon
* 1 Tsp coriander powder
* 3 Tbsp butter
* 2 Tbsp oil
* 1/2 Tsp Kasoori methi (dried fenugreek leaves)
* a few Cashew nuts
* salt to taste
* A Pinch/drop of red color or kashmiri chili for color.
* 5 Tbsp fresh cream
* Fresh coriander leaves to garnish

Method

Marinate the chicken pieces in yogurt, 1/2 Tbsp each of ginger and garlic paste. Add a teaspoon of tandoori masala, half a teaspoon of turmeric powder, a tablespoon of oil, red color and a tablespoon of lime juice. Keep aside for at least 2 hours.

Then roast it in the oven till chicken pieces are nearly done. Brush with oil and place under the grill for 3-4 minutes, so that the pieces get charred.

In case you don't want oven roast the chicken, you can also place the pieces on a tawa or a cast iron griddle and cook on a high flame, till done.

For the gravy, melt the butter and leftover oil in a pan. Add the cloves, cardamom and cinnamon in that and let them crackle. Then pour the tomato gravy, coriander powder, chili powder and cook on a high flame till it reduces to almost dry.

At this stage you will be able to see little fat globules oozing from the side of the gravy.

Add the cooked chicken and mix. Now add a little hot water, just enough to make a thick gravy. Add the salt, 1 tsp of tandoori masala and garam masala. Also crush the kasoori methi leaves and sprinkle. Mix and cook for a minute or two more, so that the flavors get mixed nicely. Garnish with cream, cashew nuts and coriander leaves. Serve hot with naan or tandoori roti.

~2 1/2 pounds fryer (up to 3 lbs) cut in servings

~1 cu flour

~1 teaspoon salt

~1/8 teaspoon pepper

~1/4 teaspoon garlic powder

~1 teaspoon paprika

~1 teaspoon leaf sage or oregano butter or vegetable oil

Rinse chicken pieces and pat dry. Combine flour with remaining ingredients except butter. Toss chicken pieces with flour mixture to coat.

In skillet, heat butter to 1/4-inch depth and cook chicken over medium-high heat until golden brown. Place browned chicken in Crock-Pot, adding wings first; Add no liquid. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours.

~2 -3 1/2 pound Frying chicken cut into 8 pieces Salt Freshly Ground Black Pepper

~2 cups all-purpose flour

~2 tablespoons paprika plus more for the finished chicken vegetable oil

1) Trim the excess fat and skin from each piece of chicken. Sprinkle the pieces with salt and pepper. Stir the flour and paprika together in a shallow bowl. Dredge the chicken pieces in the seasoned flour to coat on all sides. Shake off the excess flour.

2) Pour enough vegetable oil into a heavy deep skillet (cast-iron is perfect) to fill it to 2 inches. Heat over medium heat to 375oF (A all cube of bread dropped in the dropped in the oil will brown in about 20 seconds).

3) Add only as many of the chicken pieces as will fit without touching. Overcrowding will lower the temperature of the oil and make your fried chicken greasy. With a long-handled fork or tongs to prevent getting splattered, turn the chicken pieces until they are golden brown on all sides and cooked through, about 6 minutes. The easiest way to tell if the chicken is cooked is to poke a fork down to the bone near the thickest part if the chicken is cooked the juices will run clear, not pink.

4) Remove the chicken pieces from the skillet to drain. If you have to fry the chicken in batches, keep the fried chicken warm on a baking sheet in a 250 of oven. When all the chicken is fried, sprinkle the pieces with paprika and serve hot.

That's a good meal, but you get tired of it quickly. So here are a couple that are a little bit different. There are 2 things you need to remember when it comes to crock pot cooking.

1. Don't put frozen meat in the crock pot. Slow cookers bring up the temperature of meat slowly. That's the point isn't it? But if meat doesn't reach 140 degrees within 4 hours, you run the risk of developing bacteria in your food. We don't want this, so no frozen meat. No matter what other recipes say.

Crock Pot Chicken Fettuccini Alfredo

1 1⁄2 pounds chicken breast or tenders
2 packages (8 ounces each) white mushrooms, cut into thirds
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
1⁄4 teaspoon garlic powder (optional)
2 packages (8 ounces each) cream cheese, cut into chunks
1 cup (2 sticks) butter, cut into pieces
1 1⁄2 cups grated Parmesan cheese, plus additional for garnish
1 1⁄2 cups whole milk 1 package (1 pound) fettuccine Spray bottom of slow cooker with cooking spray and arrange chicken in a single layer. Sprinkle chicken with salt, pepper and paprika. Top with mushrooms. In medium sauce pan over medium heat, stir together remaining ingredients, except for the pasta. Stir constantly. Heat through and pour over chicken. Cook on LOW 6-8 hours or HIGH 4-5 hours. You can add broccoli to crock pot about 2 hours before serving. Serve over hot fettuccini.

Crock Pot Merlot Chicken

2 1/2 to 3 lbs. boneless, skinless chicken pieces 12 oz sliced fresh mushroom, your choice 1 large onion, chopped 2 tsp minced garlic or 2 cloves minced 3/4 cup chicken broth, low sodium 1 6oz tomato paste 1/4 cup Merlot or any dry red wine ( if you absolutely won't use red wine substitute chicken broth) 2 Tbsp quick cooking tapioca 2 Tbsp chopped fresh basil or 1 1/2 t. dried basil 2 tsp sugar 1/4 tsp salt 1/4 t. black pepper 2 cups cooked noodles 2 tbsp freshly grated Parmesan cheese, preferably Parmigiano-Reggiano

Place the mushrooms, onion and garlic in slow cooker. Place washed chicken pieces on top. Combine broth, tomato paste, wine, tapioca, dried basil (if using), sugar, salt and pepper in a medium bowl. Pour mixture over the chicken and cook on Low for 7 to 8 hours or on High for 4-5 hours. If you are using fresh basil, stir it in after the chicken is cooked, shortly before serving. To serve, spoon chicken mixture over cooked noodles. Sprinkle with Parmesan cheese. Serve with a salad and you're done.

Chicken Salad Recipes - Chicken Macaroni Salad

Here is a basic chicken salad recipe that's suitable for lunch, dinner or a potluck meal.

1 7oz. pkg. Creamette elbow macaroni

Chicken

1 1/2 to 2 pounds chicken breast

1 small red onion, diced

1 green bell pepper

1 celery stalk, chopped

Salt and Pepper to taste

2 boiled eggs, chopped

Mayonnaise

Frozen peas

Directions

Cut up vegetables. Cook the noodles and add the frozen peas at the last 3 minutes of the boiling noodles. Drain and rinse with cold water.

Add vegetable, mayonnaise, noodles and peas then the chicken. Using the canned chicken, add the water from the can. Add at the end with the rest so it does not break up too much. You'll have to add more mayonnaise as it soaks up about 1 to 2 hours later.

If using cooked chicken, add onion, celery together until done. Cool cooked chicken; dice. Add salt and salad dressing or mayonnaise. Add chopped eggs on top. Garnish with paprika.

The difference between Chinese chicken salad and the regular version is the addition of fruit, nuts and chow mein noodles.

1 (15 oz.) can chunk pineapple, drained

1 (11 oz.) can mandarin orange sections, drained

1/2 cup sliced pitted ripe olives

1/2 cup sweet green pepper, chopped

2 tablespoons onion, grated

1 cup celery, chopped

1 cup mayonnaise

1 tablespoon prepared mustard

1(5 oz.) can chow mein noodles

Chopped pecans, optional

Directions

In a large bowl, combine chicken, pineapple, celery, oranges, olives, bell pepper, and onion. Blend mayonnaise and mustard. Toss gently with chicken. Cover and chill several hours. Just before serving, mix in chow mein noodles. Turn salad onto lettuce lined salad plate. Serve with crackers.

Directions

Preheat oven to 450 degrees.

In a bowl, mix all ingredients together, except potato chips and the cheese. Pour mixture into cake pan. Mix cheese and crushed potato chips together and sprinkle on top.

Here are the ingredients:

100 grams of boneless and skinless chicken breast
2 tsp. of all-purpose flour
½ tsp. of powdered sugar
½ tsp. of freshly ground pepper
¼ tsp. of salt
1/8 tsp. of onion powder
2 egg whites
2 tbsp. of milk (fat-free)
¾ cup of Panko bread crumbs
Olive oil spray for greasing

What you must do is preheat the oven to 475 degrees Fahrenheit. Set a tray with a non-stick baking sheet and coat it with the olive oil. Set that aside first. Then you must place the chicken on a cutting board and cover the top with a sheet of waxed paper. Pound the chicken until it achieves a uniform thickness of about a quarter of an inch. After that, uncover the piece of chicken and cut it up into 25 even-sized pieces that should become your popcorn chicken.

Now you must do the flour mixture. Take the flour, sugar, pepper, salt, and onion powder, and mix them thoroughly in a bowl. Then take the chicken pieces and coat them with the flour mixture. Set them aside for a while, and in another small bowl, mix the egg whites and the milk. Beat them with a fork until the mixture becomes smooth.

Put a large quantity of bread crumbs on a sheet of waxed paper and set it right next to the egg-milk mixture. Now take the chicken pieces dipped in the flour mixture and dip them into the egg-milk mixture and then dip them into the bread crumbs. Do this one by one for the chicken pieces. Place each finished chicken piece onto the non-stick baking sheet which you prepared earlier and make sure that there are equal spaces between the chicken pieces.

Spray the chicken pieces with olive oil and season them lightly with salt and pepper before placing the tray in the oven. Bake the chicken pieces for 5 minutes and them flip the chicken pieces, and bake again for another 5 to 7 minutes in the oven.

Being able to create great stewed dishes is a skill that every cook should master, and it is possibly one of the easiest.  Stewed Chicken is a comfort food we all can relate to.  Your favorite might be chicken and dumplings, or perhaps a hearty chicken and rice stew.  There are as many variations as there are families to prepare them.  But there are some basics that all these dishes have in common.

Stewing meat has been around for hundreds, if not thousands, of years. Stewing recipes can be found in the Roman cookbooks believed to date to the 4th century, and records go back to archaeological finds 8000 years old.  It is really no wonder that even our earliest ancestors used this method for cooking meats.  If you have ever eaten any wild game you will probably recall that it was somewhat tough.  Stewing is one of the easiest ways to bring out the flavors of the various ingredients and tenderize the meat.  It is also very frugal as it allows every bite of meat to be consumed with nothing left behind but the bone.

Easy Chicken Recipe - Stewed Chicken

A crock pot - I prefer the type with a removable crock that can be put in the refrigerator overnight.  This way I can prep the meal the night before and store it safely until morning.  Then all I have to do is put the crock into the electric liner, set it and try to forget it while I am working all day.  Hard to do because I know what awaits me when I get home.

Chicken - You have many options with chicken.  You can purchase pieces already cut.  A stew pot full of chicken legs is a treat for young children.  You can use a whole chicken, cut up your own or buy cutup chicken.  You can even use a roasting chicken, a stew chicken, or a frying chicken.  They will all give you a good stew. You can remove the skin or leave it on.  The preference is yours.

Vegetables - You will need at least celery, carrots, onion, potatoes if you like, and I would suggest parsnip if you can get it.  Parsnip adds a subtle undertone of flavor and I will tell you that once I began adding this to my chicken soups and stews my family's colds seemed to clear faster.   I can't prove it but my mother swore by my chicken soups and stews and would call demanding I make it for her anytime she felt a cold coming on. 

Seasonings - Salt, pepper, and  poultry seasoning are the essentials.

Note:  You may choose to use potatoes, pasta, or rice in your stew.  We like potatoes and they are a good addition, but you may decide to use pasta or rice instead.  If you do, you will want to add it during the last hour or so before serving.  Cooking pasta or rice all day may result in these ingredients disintegrating and thickening your broth too much making a mushy mess.

Chicken Stock or Broth - You can use water, but if you start with a good chicken stock or broth the sauce and the chicken will be richer and have a fuller bodied taste.

Now you are ready.   It is a simple process to combine the ingredients in the pot and set them to cook.  But if you have a little time the night before you can add a little extra to the process. Here's how.

Saute about a cup of each, chopped celery, chopped carrots,and chopped onion, in butter, olive, or vegetable oil until the onion is slightly translucent.  Pour the mixture into the bottom of t the crock.

If you choose to use skinless chicken, now is a good time to remove that skin, but use it to your advantage.  You can cut the skin into pieces and fry it.  No coatings, just the skin in a 1/2 teaspoon or oil. Just enough to coat the bottom of the pan.  If you have some of those spray oils that is great for this.  Frying will help to render out much of the fat that you don't want,but you will be left with a crunchy intense flavor that you can add to your stew.  

I also like to brown my chicken pieces before adding them to the pot, but it is not a requirement.  If you choose to brown the parts,then just brown them. A minute or two on each side is all you need.  The meat will cook in the pot.

Add the chicken to the pot and cover with the chicken broth or water. Now set the crock, covered, in the refrigerator overnight.

If you are using potatoes and parsnips, cut them into chunks and add them with the chicken.

In the morning, take the crock out of the fridge and insert it into the electric pot.  Give the mixture inside a good stir and set the crock on High if you want to eat in about 6 hours.   Medium for after work deliciousness.  I do not advise trying to cook this on anything lower than a medium heat or for less than about 6 hours.  It is important that the chicken is fully cooked to eliminate danger of illness from salmonella.

The starch in the potatoes and the process of long slow cooking will produce a thick gravy like sauce. You can thicken this with a little cornstarch added 30 minutes before done. Mix 2 heaping teaspoons of corn starch with 1/4 cup of cool water or cooled broth taken from the pot.  Stir into the pot and allow the liquid to return to a bowl.  You could also remove the solid ingredients, the chicken, potatoes,and vegetables, to a platter.  Then pour the liquid into a small pot and add the corn starch, stirring until thickened.  About 2 minutes on a medium heat.  Pour over the platter full of goodness.

If you do not have a crock pot, you can do this on the stove top or in a dutch oven. I would not be comfortable, however, using this option unless I was home all day.  If you are home and decide to use the oven, simply follow the recipe and place in an oven proof pot.  Cook at 325 degrees for about 5 hours or until chicken is falling off the bone.  Same on the stove top.  Use a medium heat, simmer softly (tiny rolling bubbles breaking the surface) for about 6 hours.  Chicken should be falling off the bone when done.

Add a nice bread and a tossed salad and you have a meal in minutes.  You can trust me when AI tell you how much your family will enjoy this dish on a cold winter evening.  Stewed chicken is a dish we remember from childhood.  It is family dinner, Sunday dinner at grandma's house, and mother's love all rolled into a pot of steaming comfort.  And you did it all with very little effort.   Your family will think you slaved over a hot stove all day.   Shhh.  Don't tell you did it in a crock pot.

1/2 cup red pepper chopped fine

1/4 cup flaked coconut

1/4 cup green onion julienne

2 1/2 cups cooked white rice

2/3 cup crunchy peanut butter

3 cups cabbage shredded

6 flour tortillas (10 inch)

1. In small bowl, combine all sauce ingredients. Cover; refrigerate until serving time.

2. In 10 inch skillet, heat oil until sizzling; stir in chicken and ginger. Cook over medium-high heat until chicken is no longer pink (7
to 9 minutes). Add cabbage, carrots, red pepper and onion; continue
cooking until vegetables are crisply tender (5 to 7 minutes).

3. Meanwhile, in 1 quart saucepan, combine peanut butter, water, coconut, curry powder and oil. Cook over medium-high heat until mixture is heated through (5 to 7 minutes). Remove from heat. Add rice; mix well.

4. At serving time, place 1 cup filling in center of each warm tortilla. Fold two opposite edges of tortilla toward center of filling. Roll up open end of tortilla toward opposite edge. Place, seam-side down, on microwave-safe plate.

5. Microwave two sandwiches on high, turning or rearranging after half the time, until heated through (1 to 2 minutes). Repeat with remaining sandwiches. Serve wrap immediately with sauce for dipping. Makes 6 sandwiches.

4 fat free flour tortillas

1 lb boneless skinless chicken breast halves cut in thin strips

1 med tomato chopped

1 med onion sliced

1 sm clove garlic finely chopped

1/4 tsp salt

1/4 tsp ground black pepper

2 c shredded lettuce

2 tbsp worcestershire sauce

3/4 c reduced fat ranch-style dressing

Heat oven to 350°. Wrap tortillas in foil. Heat in oven for 10-15 minutes or until warm. Coat large nonstick skillet with cooking spray. Place skillet over medium high heat. Add chicken, onion and garlic; sauté until chicken is no longer pink in center, 4-6 minutes. Stir in worcestershire sauce, salt and pepper.

Divide chicken mixture among tortillas. Top each with lettuce and tomato. Drizzle each with 2-3 tbsp dressing. Roll up the tortillas and serve.

Remove the potatoes skin and cut them into small pieces. Put them in water for about 5 to 10 minutes. They will become softer and easier to cook.

Make sure your chicken meat pieces are not too large. If they are, chop them into smaller pieces. It is easier to eat and also cooks faster.

Start by heating up just a little of vegetable oil in a wok. Put the curry paste into the wok and stir fry it for a short while. Put the curry leaves into the wok and continue to cook it.

Put in some water for gravy for your curry chicken. Beware not to add too much water that it will dilute the gravy. If that happens, add more curry paste. Taste the gravy and add salt and other seasonings if necessary.

Add your potato and chicken into the gravy. Let it boil and cook for around 10 to 15 minutes. Flip the chicken and potatoes so that it is evenly cook. Sample the gravy again and adjust the taste until the curry is to your liking.

Cook the curry until the potatoes are soft to your liking. Now add the coconut milk into the curry chicken dish and stir it. Let it boil and sample the gravy and adjust the taste accordingly. Your curry chicken is now ready to be served.

This Jamaican jerk chicken recipe will change all that. We're talking about smoking-hot, well-seasoned jerk chicken, cooked the way it was meant to be. The flavor goes right to the bone, and the complexity of all the ingredients is mind-blowing.

This authentic jerk recipe begins with a wet marinade over thighs and drumsticks, and never breasts. The really important flavors in this recipe are thyme, allspice, and hot chiles. This recipe does not skimp on chiles and is very spicy. It uses a charcoal grill for best results and authenticity.

In Jamaica, jerk chicken is normally cooked over pimento branches (allspice). If apple wood is easier to find, we will be using that. But extra allspice will have to be added to make up the difference. The chicken is smoked at slow temperatures for a time, then grilled quickly to crisp up the skin.

Authentic Jamaican Jerk Chicken Recipe

This makes enough jerk chicken for about 4-6 servings, so double the recipe if needed.

Marinade
1/2 cup fresh orange juice
1/2 cup fresh lime juice
1 bunch of green onions, white and green parts roughly chopped
3 large garlic cloves, roughly chopped
2-3 habanero or Scotch bonnet peppers, stemmed and seeded
1 tablespoon fresh thyme leaves (or 2 tsp. dried)
1 tablespoon ground allspice
1 tablespoon kosher or sea salt
2 teaspoons ground black pepper
1 teaspoon dry mustard
1/4 teaspoon dry or freshly grated nutmeg
3 pounds bone-in chicken drums and thighs
2 large handfuls apple wood chips, soaked in water for about 30 minutes

1) Combine the marinade ingredients and process in a blender or food processor for about one minute until pulverized. Use rubber gloves when handling the peppers.

2) Trim and discard any large pieces of fat on the chicken pieces. Cut a few shallow slits in each piece of chicken. This will let the flavors of the marinade and the smoke seep into the chicken. Place all chicken pieces into a large, sealable plastic bag. Pour the marinade into the bag, seal, and mix it all around the chicken. Place in refrigerator to marinade for 12-16 hours.

3) Prepare a charcoal fire with higher heat on one side, and lower heat on the other (two-tone fire). Push the charcoal all the way to one side so it only covers about 1/3rd of the charcoal grate. If you are using a smoker, set it for a heat range of 225-250 degrees Fahrenheit. Drain the water from the apple chips, and add about half of them to the grill.

4) Remove the chicken from the plastic bag and let sit on a tray for 20-30 minutes before grilling. Pour the marinade into a small saucepan and keep it refrigerated for the first hour of the chicken cooking.

5) Use a wire brush to clean the cooking grate. When the apple wood begins to smoke, start grilling the chicken, skin side down, over the side of the grill without the charcoal (indirect heat). Close the lid and keep closed as much as possible.

6) Bring the marinade to a boil, and let it boil for about 30 seconds or so to kill any bacteria. Brush the marinade all over the chicken, then turn skin side up. Add the remaining wood chips, cover, and continue to grill for another 45 minutes to an hour.

7) At this point, the meat will be very tender, but the skin will be soft and rubbery. Move the chicken to the hot side of the grill, skin side down first, and cook until well-browned on all sides (5-10 minutes), turning once or twice, and moving pieces around for even cooking. Serve chicken warm.

Our Caribbean Recipe is one of several. Every Island has their version of curry. This curry chicken recipe comes from Trinidad and is truly Caribbean. The East Indians came to this part of the world after slavery was abolished. Their cuisine went through a metamorphosis and the curry that we cook today bears no resemblance to the ones from India and Pakistan.

2 lb. Chicken breast cut into bite sized pieces 4 potatoes peeled and diced 1 large onion chopped 1 1/2 ozs. Curry powder 6 cloves garlic minced 1/2 tsp. Hot pepper sauce 1 1/2 tsp. Salt or to taste 2 cups water 1/4 cup vegetable oil.

Secret Ingredient... 3 tbsp. Tamarind paste, 1 large green mango diced or 3 tbsp. lemon juice

The secret to making a really special curry is to stir-fry the dry powder for a few seconds before adding the meat. This process releases the curry flavour which is then absorbed in full by the meat.

* Heat the oil in a saucepan and then add the onion and garlic.

* Stir-fry for two minutes or until the onions go limp.

* Add the salt and curry powder and continue stir frying for about ten seconds more.

* Add the meat and stir to coat with the curry mixture.

* Cover the saucepan and let it cook for about five minutes, stirring at least twice during this time.

* Add the water, pepper sauce, tamarind paste and potatoes and continue to cook on medium heat until the potatoes are soft and the meat is fully cooked. This should take approximately 25 minutes.

Cooking tip: When using lemon juice, do not add until the final ten minutes of cooking. The reason of this, is because the lemon juice prevents the potatoes from becoming soft.

Serve with roti or over hot boiled rice.
