Use your hands instead of a knife to chop it up to avoid bruising the spinach leaves. In a small mixing bowl, place the spinach leaves and the lemon juice. Toss lightly. On 4 large serving plates, arrange the spinach leaves. Now that the chicken has had time to cool, cut up the chicken.

Top the spinach with the chicken pieces. Add the red onion and the broccoli. Lightly drizzle each salad with red wine vinegar.

Add salt and black pepper to taste. Top each salad with raisins, pecans, and strawberries.

Garnish each salad with cilantro, if desired.

But Aurora has to have her feet scrapped and cannot be there to cook the meal. That's when the fun starts. Ingredients (6 servings):

Chicken Pepperoni - Aurora's Recipe

  • 3 tablespoons - extra virgin olive oil
  • 1 - large onion, chopped
  • 2 cloves - garlic, minced
  • 1 28-ounce can - diced tomatoes (I like Hunt's brand)
  • 1 6-ounce can - tomato paste (Hunt's brand preferably)
  • 8 ounces - button mushrooms, sliced
  • 2 tablespoons - fresh basil, chopped
  • 9 ounce - pepperoni stick (remove cover around the pepperoni if it has one) cut into 1/4-inch slices and then quarter the slices
  • 1/3 cup - all purpose flour
  • 1 tablespoon - fresh oregano
  • 1 teaspoon - salt
  • 1 teaspoon - pepper
  • 2 pounds - skinless boneless chicken breasts cut into 1/2-inch cubes
  • 2 tablespoons - extra virgin olive oil
  • 1/3 cup - white wine (e.g., chardonnay)
  • 1 pound - pasta (I prefer rotini noodles for this dish)

Preparation:

Heat the 3 tablespoons of olive oil in a large skillet over medium heat. Add the onions and cook until soft and translucent, about 5 minutes. Add the garlic and cook for one minute. Add the tomatoes, tomato paste, mushrooms, and basil and simmer over low heat for about 5 to 10 minutes (mix well). Set aside.

Meanwhile, place the pepperoni in another smaller frying pan and cook over medium heat for about 10 minutes to cook the fat off. With a slotted spoon, remove the pepperoni and add it to the sauce. Discard the oil.

Add the flour to a small bowl along with the oregano, salt, and pepper and mix. Add the chicken to the flour mixture to coat. Add any remaining flour mixture directly to the sauce.

Heat the 2 tablespoons of olive oil in a large Dutch oven over high heat and brown the chicken, about 15 minutes. Add the white wine to the chicken and cook off the alcohol, about 2 minutes. Add the tomato sauce and pepperoni to the chicken and wine, cover and simmer on medium-low heat for 15 minutes. Stir periodically

Meanwhile, cook the pasta in salted boiling water for about 10 minutes.

Spoon the sauce over individual servings of the pasta. Enjoy!

1.       Keep insects away from your cucumbers and other tasty vegetables, mix small scraps of aluminum foil into your mulch. An added benefit is that the foil will help reflect light back onto your plants.

3.       Scare away the furry and feathered fruit bandits by hanging pairs of pie tins in your fruit trees. The reflection and the noise the pans make when the hit each other will help scare the pests away.

8.       Protect the trunks of your young fruit trees from nibbling rodents by wrapping the trunk in a double layer of aluminum foil in late autumn. Don't forget to remove the foil when spring comes.
9.       Trap pesky yellow jackets, wasps and moths so they don't bug you. Use an empty 2-liter soda bottle or other plastic bottle and fill it with water sweetened with sugar. Cut a small hole near the top of the bottle and hang it where the bugs seem to hang out. When the trap is full, throw it out and replace with a new one.
10.   Keep moles out of your garden and yard with castor oil. Mix ½ cup castor oil and 2 gallons (7.5 liters) water and poor on the mole hill. While it won't kill the moles, it will send them packing.
11.   Repel ants & slugs with powdered chalk scattered around garden plants.
12.   Keep mosquitoes, gnats and even ticks at bay by putting chest rub on your arms and legs.
13.   Protect the fruit in your trees from the birds that always seem to get first pick by hanging strips of aluminum foil from the branches using fishing line or something similar. 
14.   Keep deer out of your garden by staking chicken wire flat on the ground around the perimeter of the garden bed. Deer don't like to walk on it and it's not ugly to look at like chicken wire fence.
15.   Use plants as a natural pest control for moles. There are certain plants that moles just don't like. The most common are daffodils and alliums.
16.   Keep the neighborhood cats from using your garden as a litter box. Spread a mixture of orange peels and coffee grounds around your plants. The pungent odor should keep the cats away and you have the added benefit of a great soil enhancer.
17.   Stop bugs from eating your plants. Just sprinkle a mixture of black pepper with flour around your plants and the bugs will find a different place to dine.
18.   Get rid of nematode worms. This microscopic parasite pierces the roots of plants and causes knots. Create an unfriendly environment for these pests by mixing 5 pounds (2 kg) of sugar for every 250 square feet (25 square meters) of garden. The microorganisms that feed on the sugar increase the organic matter in the soil, which will eliminate the nematodes.
19.   Protect your plants from rabbits, chipmunks and woodchucks. Chop up a super hot pepper (habanero for example) and mix it with 1 tablespoon ground cayenne pepper and ½ gallon (2 l.) of water. Boil the mixture for 15-20 minutes, cool, and strain through cheesecloth. Pour into a spray bottle along with 1 tablespoon of dish soap. Spray plants well once a week or sooner if it rains. The soap helps the mixture stick to the plant and the hot flavors will send the little plant munchers looking for another place to snack.

1-4 to 5 pound Roasting chicken

2-3 quarts of beer (best with Killians, Yuengling or any other full flavored beer)

1 cup of sliced mushrooms

Place the chicken in a roaster and add enough beer to cover at least half of the chicken. If you're thinking this is a waste of good beer, don't. (You will thank me later). Place the roaster in the refrigerator and let the chicken marinate overnight. In the morning, turn the chicken over so the other half can marinate for several more hours.

When you are ready to cook the chicken, pour off all of the beer and add 4 cups of new beer (you really will thank me later). Place the roaster in the oven and cook at 350 degrees until the chicken is nearly done. Remove about 2 cups of the liquid for gravy. Add the celery, carrots and mushrooms. Cook for an additional 30 minutes or until the chicken pulls apart easily with a fork. When it's done, take it out of the roaster, place it on a serving platter and serve with mashed potatoes, beer gravy and your favorite vegetable.

I'm not going to give you specific instructions for making the beer gravy (that's another recipe after all). But I will tell you that you can mix flour and water until it is pasty and then slowly add it to the simmering liquid until it thickens. If you're lazy, you can use the chicken gravy packets you buy at the supermarket. Either way, the beer gravy is going to taste great on your mashed potatoes.

Having a chicken coop is a good way to become self sufficient. Chickens can provide eggs for baking and cooking. They can also be a source of meat. They also can provide an extra income by selling the eggs. Chickens require a relatively small place compared to other farm animals.

Although this all sounds great, as with having any animal, there are responsibilities. You need to be absolutely sure that this is something you can and want to do. So if you are confident that you'd like to build a chicken coop and care for the chickens, then read on!

How to Make a Chicken Coop in 7 Steps

Step #1 - Chicken Coop Construction - Get Prepared With Plans!

The first thing you will need to do is draw out plans. Know how many chickens you want and what type of chicken coop you will need. Most areas have predators, so consider that as well. Get the correct materials including materials for insulation. You will want to make sure that you get pressure treated outdoor wood.

This is so the wood will not rot from moisture. You will need insulation to keep the chickens warm during the winter. However, if you live somewhere that it gets below freezing you will need to install heating where the chickens will be roosting and laying their eggs. The dimensions of your coop directly depends on the number of the chickens you want.

Step #2 - Base Frames and What to Do With Them

When getting started, you will need to find the highest point in the yard and level it off. Make sure that your chickens are going to have 2 square feet of space per chicken. If you are in lowlands build it up. This is so the area doesn't flood and leave the ground holding water.

Lay the base frame and floor. the dimensions will vary depending on your requirements. You should start with a rectangular frame with slats that are spaced 6 to 8 inches apart depending on the size you are wanting. Lay the floor using your choice of fiberglass flooring or plywood.

Step #3 - Building the Walls

Next, build the frame for the walls. Make sure the beams are approximately 1 to 2 feet apart depending on the desired size. The roof will slant enough to allow for rain to runoff. To make this easier, you can start all same size beams then use a measuring tape and a pencil to get your desired slant evenly. Since the roof will be slanted, it is important that the wall frames are the same size.

Make sure that the measurements for each frame strut matches one another. There should be two of each size. The back wall struts should be the same size as the last strut on the side wall frame. It is easier to build the frames on the ground and make sure that the measurements are correct and then lift them up and match them accordingly.

Step #4 - The Walls Are Up, Now What?

Once the wall struts are up, the roof struts can be laid across the top of the side wall frames. If you would like an over hang, you can cut purlins to support an over hanging roof truss. You can choose which side you want a door, but a door is necessary to clean the interior of the coop and put down food when needed.

The side of the wall that the door is going to be put in will need the struts to be closer where the door frame is being placed. The first strut from the edge should be about two feet in. The second will be only one foot with another strut at approximately three feet from that one to ensure a standard door can fit.

Place a beam cross section between the two struts that make the door frame high enough for you to get under. Five and a half to six feet is best. the less you have to duck down, the better. Across the top of the door frame, attach at least one more short strut from the top of the door frame to the roof. Also, make sure to make a space for at least two windows for circulation of air using the same process. Using steel or aluminum angle supports is useful in ensuring that the structure is sound. Screws instead of nails hold better, as well.

Step #5 - Building Nesting Boxes for Your Chickens

Building the nesting boxes should be done after the wall frames are installed, but before the inside walls are hung. They can be constructed at a minimum of twelve inches, otherwise the chickens will not lay in them as they will be too small. Access doors for them should be placed on the outside to ensure that you can access the eggs and clean the nests as needed. Put in as many nesting boxes as you have chickens. Chickens will sometimes share boxes, but you do not want to depend on this.

After the nesting boxes are finished, cut wall panels to the specifications needed. Install the wall panel on the inside of the coop to enclose it, keeping in mind doors and windows. Once those are installed, insulate the walls from the outside before hanging the outside wall panels. Tack up the insulation between the struts, again keeping in mind the windows and doors. After the insulation its hung, hang the outside wall panels.

The back wall will be nearly solid, except for a small hole in the wall that will be used as an exit for the chickens. You should cut the hole approximately 12-24 inches in diameter. Put a sloped plank for the chickens to enter and exit down. Once this is all complete, you can add your desired type or style window of choice, as well as a door. You will need to attach the door with hinges and a way to open it, as well as locking it.

Step #6 - Build the Roost!

Building the roost depends on what is needed. Take wooden dowels, cutting them to the desired length, then fastening them to a small wooden plate. Attach the plate to the inside wall once it is finished. This should be one of the last steps. Put in as many as you desire, but keeping in mind to leave room for clean up.

Your major concern should be keeping your chickens safe. Once the chicken coop is up, it is best to build what is call a chicken run. It is a length of fence that surrounds the coop. This fence can come out from the coop about six feet, but can be further if you need it. It should stand about six feet high. The design is going to be simple, but a bit like the frame for the chicken coop walls.

It should be built similarly, so that there can be a door installed with which you can enter the area around the coop to clean up and to get any eggs that the chickens lay there. once the frame work is up, attach chicken wire the height and length of the wall, but dig a trench on the inside of the chicken run and run the wire fencing wider so that it goes into the ground and lays flat, about twelve to eighteen inches out from the wall itself.

Step #7 - Dealing With the Chicken Wire

Cover the chicken wire back up to make sure that the chickens do not get tangled in it. Running the wire under the ground is done so that if a fox or other ground based predator tries to dig under the fence, they will not get past the chicken wire under the ground. When you are wanting to protect against air born predators, like chicken hawks, cover the entire area of the chicken run from wall to wall with chicken wire across the top.

This will keep the predatory birds from getting in. If you build your own door into the coop area, make sure to cross the frame work of the door with two beams to support the weight of the door before attaching the wire to it. For the walls of the chicken run, it is not necessary to use chicken wire. You can use almost any kind of wire fencing, but for the enclosure roof, it is best to use chicken wire as the links are smaller.

These instructions can vary depending on the needs. Feel free to have fun and be creative. Add color as well as making your windows and doors have shapes. This after all, will be for you and your chickens. So get the whole family involved, and come up with something fun and inventive that will not only be fun to look at, but be efficient as well.

Champagne Chicken Recipe - Chicken Au Champagne

Last week France celebrated Bastille Day on July 14th, 2009. The news of that celebration brought to mind a recipe that I had used many years before. I always seek recipes that are easy and economical to prepare. In this day and age, we all seem to have less time to cook and less money to spend on ingredients. I had bookmarked that recipe because it seemed so nice and simple. The recipe in her book is called Champagne Au Chicken.

I tried this recipe again over the weekend and it really was so easy to prepare. I washed the chicken and added the shallots which certainly added a lovely texture and aroma to the chicken. The champagne kept the chicken moist and juicy inside while making the outer skin of the chicken wonderfully brown and crisp. Be sure to baste the cooking chicken a few times. The juices from the cooking chicken are out of this world. All in all, this is a great tasting recipe that really did impress my family and make me look like a Food TV chef. I sure do love recipes that do that.

Champagne Chicken Recipe - Chicken Au Champagne

4 chicken breasts (with skin and bone)

Salt and freshly ground pepper

Chervil, tarragon, or thyme (optional)

1 shallot, quartered

1 cup Champagne (Verve Cliquot Yellow Label Brut recommended)

1. Place the chicken breasts in a roasting pan, and season them. Pour 1/2 cup of the Champagne over breasts. Make a slit in each breast and insert a piece of shallot.

2. Place the pan under broiler, skin-side down, for 3 minutes, until the skin is nicely browned. Turn and broil the other side for 5 minutes.

3. Remove the chicken from the broiler, baste with pan juices, and add the remaining 1/2 cup of Champagne. Adjust the oven temperature to 475*F and bake the chicken for 30 minutes, basting once or twice.

4. Serve over brown rice. Sauteed mushrooms add a special touch and go beautifully with Champagne. (In a warm frying pan with a touch of olive oil, add clean, roughly chopped mushrooms, and cook for a few minutes. Add a few drops of lemon juice, freshly chopped sage, seasoning to taste, and 1 tablespoon of butter.) Pour the cooking juices from the chicken over the meat and rice. Serve the remainder of the bottle of the Champagne (about 6 glasses) with the meal.

1/2 cup grated Parmesan cheese
4 ounces of wide egg noodles

Instructions

1 - Start the egg noodles cooking in salted water (6 - 8 minutes) while preparing the sauce.
2 - Mix the salt and pepper with the flour in a medium sized bowl.
3 - add the chicken pieces and shake well to coat all the pieces.
4 - Heat the olive oil in a frying pan or skillet.
5 - Add the chicken pieces and cook until browned.
6 - Add the milk to deglaze the pan, and continue heating until the sauce thickens.
7 - Add the Parmesan cheese and when melted ( 1 or 2 minutes) remove from the heat.
8 - Toss with the cooked noodles and serve immediately.

In 9-inch skillet or wok heat peanut oil; add chili peppers, if using, and cook over medium-high heat for 30 seconds. Using a slotted spoon, remove and discard chili peppers. If not using chili peppers, add chicken, onions, mushrooms, bell pepper, broccoli, garlic and gingerroot to skillet and cook over high heat, stirring quickly and frequently, until chicken is no longer pink, 2 to 3 times.

In small mixing bowl, combine broth, cornstarch and sesame oil, stirring to dissolve cornstarch. Stir into chicken-vegetable mixture
and cook, stirring constantly, until mixture comes to a boil. Reduce
heat to low and let simmer until thoroughly heated, about 5 minutes.

1 tb Tomato sauce

1 tb Lemon juice Clove garlic, minced

Sauté chicken in oil with garlic, onion, salt, paprika, pepper and
Worcestershire sauce for about 10 min's. Cool completely. Toss lettuce

How to De-Bone a Chicken Thigh

If you are cutting up a whole chicken, you will need a sharp knife to slice through the joint where the drumstick meets the thigh. You will find the cartilage very soft so it is easy to cut.

Bone the drumstick using the same method as you used for the thigh. Cut along the top of the bone and slice deeply until the knife is touching the bone. You will be able to see the white bone in the cut you have made. Pull the bone upwards and away from the chicken thigh.

Cut into the chicken some more, so that you can remove the bone altogether. You will probably have to slice some more of the meat off the bone so you can get it out. Keep slicing away bits of sinew, tendons and skin until you have a boneless thigh.

Recipe for Crockpot Chicken Thighs in an Herby Orange Sauce

This is such a simple recipe and the fact that you can use a slow cooker means that you can leave this recipe to cook by itself all day while you are out. Serve this tangy citrus chicken dish with noodles or rice and perhaps some broccoli or beans on the side. This recipe serves four people.

You will need:

  • 2 lbs skinless, boneless chicken thighs, in 1 inch pieces
  • Juice from 1 orange
  • Zest from 2 oranges
  • 1/2 teaspoon crushed dried thyme leaves
  • 1/2 teaspoon crumbled dried rosemary
  • 4 slices crumbled, cooked lean bacon
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons white sugar
  • 2 crushed garlic cloves
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon dried basil
  • 3 peeled, diced carrots
  • 1 chopped onion
  • 14 1/2 oz can diced peeled tomatoes
  • 6 oz can tomato paste

How to make it:

Remove any visible fat from the chicken, then combine it with the orange juice and half the zest, tomatoes and their liquid, oregano, thyme, pepper, garlic, rosemary, onion, carrot, basil and tomato paste in a three and a half quart crockpot. Cover and cook on "low" for about six hours or until the chicken thighs are cooked through. Stir in the rest of the orange zest, the lemon juice, and sugar. Sprinkle the crumbled bacon over the finished dish.

Baked chicken temperature when finished should be at least 165 degrees Fahrenheit inside the bird. Allowing the bird to "rest" for 10 minutes before serving should allow the internal temperature to rise to 180 degrees because it continues cooking during this rest period.

Most oven baked whole chickens are cooked in a 350-375 degree oven for 1 1/2 to 2 hours. Because of the wide variation of roaster sizes no specific cooking time can be given. Use a meat thermometer inserted into the thickest part of the bird's inner thigh making sure it is not in contact with the bone or visually check it as described above.

This recipe is for a bird without stuffing.

Such a recipe is necessary when cooking for a person with a wheat allergy or dieting to lose weight. Stuffing the bird with vegetables as described below is another alternative if faced with this situation.

*Rinse the chicken with cool water inside and out then pat dry with paper towels.
*Place the chicken in a roasting pan.
*Smear the chicken with butter and place a cover on the roasting pan.
*Bake in a 350-375 degree oven for 1 1/2 to 2 hours as described above.
*Remove the cover during the last 20 minutes of cooking time to allow the skin to brown.

Barbequed Chicken Recipes

Barbequed chicken recipes use this same basic format (but leave the cover off the entire time). Baste the bird with your favorite barbeque sauce every 15 minutes until done.

Stuffed Oven Baked Whole Chicken

You can use any filling you like to stuff your bird. Or you can try this recipe.

*Place 3 eggs into a blender with a medium onion (skin removed), a medium apple (cored with seeds removed), and 3 sticks of celery.
*Add pepper to taste.
*Blend until liquefied.
*Pour over cubed whole grain bread that has dried overnight or in a 200-degree oven for one hour.
*Gently fold egg mixture into bread cubes.
*Gently stuff the cavity of the chicken with the filling.
*DO NOT compress the bread cubes!

Cook as described above allowing additional cooking time for the stuffing to cook thoroughly.

You can also stuff your bird with a variety of vegetables such as peeled and cubed potatoes, onion, carrots, turnips, or rutabaga seasoned with melted butter, pepper, seasoned salt, oregano, or thyme to taste. Cook as described above.

Grilled Chicken Fajita Quesadillas

Ingredients:

1-packet Taco seasoning mix

2-tablespoons Fresh lime juice

1-tablespoon Fresh lemon juice

1-teaspoon Honey

1-teaspoon Sugar

1-pound Chicken breast, boneless & skinless, sliced

1-large Red bell pepper cut into strips

1-medium Onion cut into strips

½-cup Black olives slices

1-large Avocado, pitted, peeled and thinly sliced

2-cups (8-ounces) Mexican blend shredded cheese

8-large Tortillas (8-inches in diameter)

Salsa & sour cream (optional toppings)
Instructions:

Preheat grill for about 10 minutes. Mix taco seasoning, fresh lime juice, fresh lemon juice, honey and sugar in a medium bowl. Add sliced chicken breast; toss to coat and set aside.

Put red bell pepper strips and onion strips in grill basket and place on grill. Be sure to spray grill basket with cooking spray unless you have a non-stick grilling basket. After placing grill basket with veggies on grill close the cover and grill for about 4 minutes or until tender. Remove from grill and cover to keep warm.

Place chicken strips on grill. Close grill and grill about 4 minutes or until chicken is no longer pink.

Take four tortillas and layer veggie mixture, chicken, olives, avocado and cheese. Top with remaining four tortillas. Put one quesadilla at a time on the grill. Close grill. Grill about 5 minutes or until golden brown and cheese is melted. Cut each quesadilla into four wedges. Top with salsa and sour cream, optional.

Serves 4

Chicken Curry Recipes - Chicken Madras

Chicken Madras is a dish that can be found in Indian restaurants all over the world and for many people it is among their choice of top chicken curry recipes. Chicken Madras comes from southern India and the curry is quite hot owing to a fairly large amount of chilli in the recipe although it can be reduced if necessary if it is too hot for your taste.

Below is a version of the Chicken Madras curry I've been preparing for a few years, which is based on that which appears in Pat Chapman's book Indian Restaurant Cookbook. The main difference is in the spice mix, which adds a larger number of spices into the initial spice mix and does away with the addition of garam massala towards the end. Another difference is that this recipe doesn't call for tomato paste to be added, which to my mind makes the sauce taste too much of tomato, and the lemon is added much earlier to be absorbed by the chicken.

Ingredients:

2 chicken breasts cut into bite sized pieces

vegetable oil

1 onion sliced into thin strips

1 tin tomatoes

juice of 1/2 lemon

Spices:

4 dry red chillis

1/2 teaspoon black pepper corns

1/2 teaspoon chilli powder

1/2 teaspoon paprika

teaspoon cumin seeds

teaspoon fenugreek seeds

teaspoon turmeric

2 cardomoms

pinch cinnamon

4 cloves

pinch coriander power

pinch ginger powder

pinch mustard seeds

Method:

1. Fry the chicken in about 3-4 tablespoons of vegetable oil to colour and remove from the frying pan.

2. Add the onion until golden then add the spices. Mix the spices and blitz before adding to the pan and fry for about 5 minutes, adding a little water if necessary.

3. Add the chicken and pour the lemon juice over. Stir well.

4. Chop the tomatoes and stir into the mix. Cook at medium heat for about 10 minutes.

5. Cook in a a medium oven for 45 minutes and serve with basmati rice.

You are going to need the following.

handful of herbs
1/4 cup of flour
1 tablespoon of butter

For moist boneless chicken breast you are going to start off by getting a large mixing bowl and mix together a half of a tablespoon of salt and just a dash of pepper in with your flour. If you are going to use herbs (which is best for flavor) then you are going to chop your herbs up very fine. Mix your herbs in with all your flour mixture. The next thing you are going to do is bread each side of the chicken lightly in flour mixture.

You are going to place the boneless, skinless chicken breasts in a large pan that has a lid. Next you need to heat over medium-high with your butter and some olive oil. You are going to quickly sear both sides until slightly golden. Be careful not to do this for long because you don't want to cook the inside much at all. To get the best results for moist boneless chicken breast you are going to cover your pan with a lid and reduce the heat to low. Cook for about twelve minutes without opening the lid. It is important not to open the lid so no moisture is let out. Remove your pan from the heat and let it stand for another ten minutes still covered. Uncover and serve while still hot. This recipe will have you wanting more moist chicken breasts. You will easily be able to recognize the difference between cooked to long chicken and chicken made just right. Get your taste bud's ready for moist boneless chicken breast you have yet to experience.
