Easy Quinoa Chicken Recipe With Garlic

Quinoa is probably one of the most versatile super foods we have around, you can either serve it as a main course or a side dish. It's packed with high-quality protein and essential nutrients, it's filling and it tastes good so what more can you ask for?

I love serving quinoa with my favorite meat- chicken, the two ingredients taste really good together. One simple recipe that I found is the quinoa chicken with garlic. To make this recipe you need: 1 cup uncooked quinoa, 2 cups chicken broth, 20 leaves fresh basil (chopped), 1 ½ lbs chicken breasts (cubed), 4 tablespoons olive oil, 1 onion (diced), 1 red bell pepper (seeded and diced), 1 green bell pepper (seeded and diced), 2 tablespoons minced fresh garlic and salt and pepper to taste.

Boil the chicken broth with quinoa (like how you would cook rice) and turn down the heat, simmer it for 15 minutes or until all the liquid is fully absorbed. Mix the basil and set the mixture aside. Heat oil and stir fry the chicken until it is cooked, add vegetables and cook for about 2 minutes. Add garlic, green bell pepper and red bell pepper and stir fry until you see them a little bit lump. Season it with salt and pepper. Your last step would be to top the quinoa with the stir fry mixture. Now that's easy huh?

This quinoa chicken recipe will make 4 servings. I always cook this when I'm in a hurry and I hardly have time to cook. Feel free to add more vegetables if you want. I usually add carrots and sometimes I put green beans or broccoli.
