How to Make It

To your stir-fry wok or a large heavy skillet or saucepan over a high heat setting, you will add 2 tablespoons vegetable oil to heat. Add the chicken slices and then stir-fry until the meat is firm and white.

Add the onions and mushrooms and then continue to stir-fry until the vegetables are tender and soft. Remove meat and vegetables from the pan after cooking and allow oil to drain from them.

Taking less than an hour to make they do make a lovely surprise on Good Friday and Easter Sunday when you present someone a hard boiled egg for their breakfast that still has a hen sitting on top of it.

Don't be fooled into thinking this tea cosy and egg cosy with hens must be difficult to make, because they are really very quick and easy with minimal shaping.

Chickens

To make the three country hens, tea cosy you will need...

5.5 mm, UK size 5 or US size 9 knitting needles,

3.25 mm, UK size 10 or US size 4 knitting needles,

50g White double knitting wool,

50g Lemon double knitting wool,

25g Dark Brown double knitting wool

25g Red double knitting wool

Other oddments of hen coloured double knitting wool and scraps of felt for the beak.

Knit the Front and Back of the tea cosy to match

Using the white wool and the lemon wool as double thickness yarn and size 5 knitting needles, cast on 28 stitches and work 38 rows in straight garter stitch (Knit each row)

Leave the stitches on a spare needle until later.

Shaping the top...
Using white and lemon wool as a double yarn proceed to knit across the tea cosy front and then tea cosy back as follows...

Shaping the top Row 1: *K5, K2 tog* repeat to end

Next and every alternate row Knit.

Row 3: *K4, K2 tog* repeat to end.

Row 5: *K3, K2 tog* repeat to end.

Row 7: *K2, K2 tog* repeat to end.

Row 9: *K1, K2 tog* repeat to end.

Row 11: *K2 tog* repeat to end.

Thread the end of the yarn through the remaining stitches and through the loop of the yarn itself and draw up the knitting tightly and Finnish off.

With the front and back right sides together, sew about 9.5cm from the finishing off point down the side seam towards the cast on edge.

At the bottom of each side seam, sew about 3cm upwards. The holes are left for the teapot handle and spout.

Knitting the hens...
Using a hen coloured double knitting wool and with size 10 needles, cast on 16 stitches and work 16 rows in stocking stitch (knit a row, purl a row)

Cast off.

To make up the hen...
Fold the square of knitting in half diagonally (with the right sides of the work facing) to form a triangle. Sew along one edge, turn and stuff lightly and neatly over-sew up the opening. With the thread still attached, sew small running stitches half way along the folded side of the triangle. Then insert the needle into the middle of this side and come out at the opposite corner, passing the yarn through on the inside of the hen. Draw up the stitching tightly to the hen's tail and head a bird like shape, and finish off.

The Hen's Comb (The red crest on the top of its head)...
With red double knitting wool and sized 10 knitting needles, cast on 7 stitches.

Row 1: Knit
Row 2: K1 *Bring the wool round the needle tot he front of the work and K2 tog* repeat to end.
Row 3: Purl
Cast off.

To make up the Comb...
Fold the red knitting in half so that the holes form a little scallop edging. Over-sew the long straight edges together and sew into position on the hen's head.

Finishing off...
Finish off the hen by sewing an eye on either side of its head in dark brown wool. Cut a diamond shape from black felt, fold in half to create a triangle and sew into place. With red wool sew a couple of loops just below the beck for the hen's wattles.

Make three hens in this way for the top of the tea cosy.

The Nest...
Using dark brown knitting wool and size 5 knitting needles cast on 60 stitches and then cast off.

Sew this long length of knitting to the tea cosy to form four loops, a bit like a flower. These loops make the hen's nest.

Sew the three hens into position on the nest at the top of the tea cosy.

To Make The Egg Cosy...
With lemon and white double knitting wool and size 5 knitting needles, cast on 27 stitches and work 12 rows in garter stitch.

Shaping the Egg Cosy Top...

Row 1: *K1 K2tog* repeat to end.

Row 2: Knit

Row 3: *K2 tog* repeat to end.

Thread the end of the yarn through the remaining stitches and through the loop of the yarn itself and draw up the knitting tightly and Finnish off.

With the front and back right sides together, sew up the seam.

The Egg Cosy Nest...

Using dark brown knitting wool and size 5 knitting needles cast on 20 stitches and then cast off.

Stitch in a ring at the top of the egg cosy. Finally make a hen to sew at the top of the cosy.

Slow Cooker Chicken Stew and Dumplings

Your complete dinner in one pot! This meal has been a family favorite for years, it appeals to the meat and potato lovers and is also quite low fat. It is quick and easy to assemble in the morning and can be left to cook all day in your slow cooker. Add the dumpling batter to the pot ½ hour before dinner. Serves 6.

Stew:

3-4 medium potatoes, cut into small chunks

3-4 stalks of celery, sliced

2 cups of whole baby carrots

1 ½ cups frozen peas

1 ½ lb boneless, skinless chicken breasts, cut into chunks

1 can low fat cream of chicken soup

1 can low fat cream of celery soup

½ cup low fat milk

½ cup water

1-2 tsp poultry seasoning (according to taste)

½ tsp fresh ground pepper

Dumplings:

1 ½ cups all purpose flour

1 tsp salt

3 ½ tsp baking powder

2 tsp parsley

1 egg, beaten

3 tbsp melted butter or margarine

2/3-1 cup milk

Directions:

1. Put potatoes, celery, carrots and chicken into the slow cooker.

2. Mix soups, seasonings, milk and water together and pour over vegetables and chicken.

3. Cook on low for 7-8 hours or until chicken is cooked and vegetables are tender. (You can cook on high for 4-5 hours but results are better on low).

4. Add peas during the last ½ hour of cooking.

5. To make the dumpling batter: mix flour, salt, baking powder & parsley together; add egg, melted butter and milk to dry ingredients. Use enough milk to make a soft dough.

6. Turn heat on slow cooker to high and drop 6 spoonfuls of the batter on top of stew.

7. Cover and cook for approx. 30 minutes or until dumplings are well done. (The dumplings will expand to touch each other during the cooking, so separate them with a knife about half way through to make sure the dough on the sides gets cooked as well).

Hint: Check the stew before you add the dumpling batter to make sure there is plenty of liquid. You can add a can of chicken broth or water if necessary to make sure you have lots of gravy once the dumplings are cooked.

Wow what a tough job you have today! Finding a speaker who is a Proven Expert and within your budget that your audience will appreciate and love. A speaker that makes YOU look good! It's a large investment of time and dollars so let me give you 10 ideas to help you get the best out of your Speaker Investment.

1. First let me tell you that with all the job layoffs - there are allot of people who are now trying their hands as speaking for a living. And the scary thing is YOU probably can't tell. Today there are vendors who will create a glossy cd/dvd by creating a "fake" audience and adding in applause, and with the right kind of editing - you just might never know these people have no paying clients under their belts, that they're speaking for free while practicing their content and you might be their first paid audience. That's ok... you just need to know that BEFORE you book them. If you want to increase your odds for success, go to a speaker you trust and ask who THEY would recommend. I have clients calling me apologetically "It's not that we don't want you, we just need a topic you don't do or a MAN instead this year, can you help us?" They know I am not a Speaker - I am a RESOURCE to my clients. I build the trust that I can problem solve for them so they call me for help. And I will NEVER recommend a speaker unless I have sat in their audience and seen how they are received by their audience. After all it is MY reputation on the line when I refer.

2. Who's on their client list? Make sure you call at least two past clients and ask them about results of their program. It's nice to hear "they were great" but I'm sure you want more than a "feel good" feeling for your return on your investment

4. How do they PARTNER with you BEFORE the Event? Attendees are waiting until the last minute to make a decision to attend. So what does your speaker do to partner with you and create a high attendance level? Here are just a few things I do for my clients:

- Create a personal email that gets sent out to all prospective attendees before the event telling them that I'm excited about meeting them there.

- Offer a free article about the topic I will be speaking on that often gets printed on their website, newsletter, or magazine

5. Do they have Celebrity Clout? Ask them where they've been published and see if they can create a way to blend that into your conference's theme. Since my stories are in Chicken Soup for the Soul and Chocolate for the Soul books, many clients theme their lunch with a chicken soup appetizer and a chocolate dessert.

6. Are they savvy with the media? Do they know how to talk in "sound bites"? I often do radio promotions of my client's upcoming event via telephone several weeks out. And I'll go to the local television station before or during an event to help that organization get even more publicity.

7. Are they able to help you build additional Pre-Conference Revenue? Ask if they are able to do a pre-conference breakfast and then you can charge an additional fee for this Private VIP Event. Sometimes I will also do a VIP luncheon allowing the audience to ask questions and have access to me that they would not get otherwise in the large convention audience.

8. Do they know other speakers? Remember your speaker should be a resource to you. I always ask my clients - will you also be looking for additional speakers for your event? Then I lighten that work load by recommending or even contacting those speakers for them. Often time a speaker buddy will negotiate down a fee as a favor to me that the client would not be able to get otherwise. I also have a list of Audio/Video vendors who are available locally for clients and a specialty company again for helping theme their event or "stuff their bags".

9. Can they do more than just one session? A speaker who has been in business successfully for many years can often stay and do a breakout for you on another topic. 1 lb. boneless chicken breast cutlets
1 egg, beaten

4.8 oz. mozzarella cheese, shredded

  • 1 finely chopped green onion

As usual after a session in the gym I have a chat with my trainer and invariably the conversation turns to eating. I recently asked him what if any diet he uses or special foods he eats when toning up for a body building competition. I had taken the liberty of bringing along my recorder and this is how he replied.

I reduce my carb intake moderately and temporarily prior to bodybuilding competitions. Specifically, it's the foods that are on the starchy carbs and grains list that go down during the brief pre-competition period when I'm working on that really "ripped" look. I keep the green and fibrous veggie intake very high however, along with large amounts of lean protein, small amounts of fruit, and adequate amounts of essential fats.

It's very important for compliance to choose foods you enjoy and to have the option for a wide variety of choices. In the past several years, nutrition and obesity research - in studying ALL types of diets - has continued to conclude that almost any hypocaloric diet that is not completely "moronic" can work, at least in the short term.

It's not so much about the high carb - low carb argument or any other debate as much as it is about calorie control and compliance. The trouble is, restricted diets and staying in a calorie deficit is difficult, so most people can't stick with any program and they fall off the wagon, whichever wagon that may be.

I believe that a lot of our attention needs to shift away from pointless debates (for example, low carb vs. high carb is getting really old... so like... get over it everyone, its a calorie deficit that makes you lose weight, not the amount of carbs).

Minestrone Soup

Minestrone and I have had a complicated relationship. It's long been a favorite of my mother's, so I've been eating it all my life. But, I can't say it's ever been a favorite of mine. It has its upsides, like it's quick and easy, accommodating to a variety of ingredients, and so good for you. But, I was never crazy about it...until now! One of the little known joys of going vegan is a taste bud awakening. I don't know if the dairy and meat make it hard to taste other ingredients, but in the last few months, everything tastes better, and more alive than ever. Even things I used to make taste more vibrant and flavorful than I remembered. So when I ate this minestrone, it was like meeting for the first time. It was so good! It's sitting in my refrigerator right now, and I want another bowl of it. It's also perfect for summer (see my summer corn) or winter vegetables. It's great to have in the freezer with a loaf of my favorite garlic bread to break out on days you just don't feel like cooking. So, if you feel like you need something warm and nourishing, root around in your refrigerator and make a pot tonight!

2 tablespoons olive oil
1 onion chopped
1 clove garlic chopped
5 cups vegetable stock
1 large can tomatoes with liquid
2 carrot
½ head of cabbage
1 cup green beans
1 cup wax beans
1 can kidney beans
1 can white beans
¼ cup basil
1 tablespoon oregano
A pinch of sugar
A splash of balsamic vinegar
1 bay leaf
Salt and pepper
5 cups spinach

Heat the olive oil in a large pot. Add the onion and carrots and garlic and sauté until soft. Add the stock, tomatoes, green and wax beans, cabbage, basil, oregano, sugar, and bay leaf. Simmer until vegetables are tender, but not limp, about 20 minutes. Add the beans, balsamic vinegar, and spinach. Season with salt and pepper. Serve hot!

Because chicken is relatively inexpensive and fairly easy to prepare there are a vast number of recipes available throughout the world. Chicken spices and herbs are abundant and are readily available in almost any market anywhere. Spices and herbs have become abundant thanks to the explorers of the 15th and 16th century.

Open your cupboards and you'll find a spice or herb, or both that can be the beginning of a very tasty recipe. Every chef has several ways of preparing and cooking their chicken and most have a secret ingredient for their wonderful signature dish. Of course, some of these recipes vary regionally and from country to country, depending on availability and prices at the market.

Aromatic herbs are also used along with spices, thereby adding that extra punch. Sage, thyme, rosemary and basil are a good example of the aromatics that I use. When using spices, remember that sometimes a little goes a long way. I have found that marinating the chicken is very helpful in distributing the flavors evenly. Gauge your addition of salt, especially if your recipe calls for butter; make sure that you use unsalted butter so that you don't overwhelm it with too much salt.

Recipes of all kinds are available on the internet and in cookbooks, so not cooking chicken is a limitation that should not occur in your kitchen. For health reasons I prefer to bake and not fry chicken, although I enjoy fried chicken very much. There is one recipe for fried chicken that is very plain and simple. Use all white, all dark, or a combination of both. Wash the chicken and pat dry; add salt, pepper, and allspice. Deep fry in canola oil and pat dry with paper towels before serving.

A very exotic and tasty way to prepare your chicken is by using a fresh, wonderful homemade curry that you will use again and again.

Indian Curried Chicken Recipe:

Basic Curry Powder
6 dried red chiles
1 oz. coriander seeds
2 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp black peppercorns
1 tsp fenugreek seeds
10 fresh curry leaves
½ tsp ground ginger
1 tbsp ground turmeric

Remove seeds from chiles. Dry roast the whole spices over a medium heat until they darken, stirring or shaking the pan frequently to prevent burning. Leave to cool, then grind to a powder. Dry roast the curry leaves in the pan for a few minutes, then grind and add them to the mixture with the ginger and turmeric, blending well.

Rub your Curry Powder into the chicken, as needed, about half hour to an hour before roasting in the oven at 350 degrees. A full sized chicken should take twenty minutes per pound, so use your discretion. All things said, it is not what spice you use, but, how you use it. Spices should blend in and not overwhelm. They should never be so intrusive that the essential character of the dish is lost.
